A few weeks ago I was hot, sweaty, and very much done with being in the bee suit. I was inspecting the very last hive at the apiary and instead of stacking an empty hive box on top of the lid…
I stacked the lid on top of the empty box. 😂

Fast forward to today… and they built this gorgeous wild comb in the empty space.

I swear bees can turn any space into a work of art. Every curve, cell, and every inch of comb is so intricate and creative. It’s amazing to think they just know how to do this. They simply do what God created them to do.

This is going to be an absolute mess to clean up but the honey comb sure will make for a tasty treat! 🍯

Our spring harvest is bottled, and it may be our favorite yet. This batch is rich, floral, and oh so smooth!! (shout out to the tallow and mimosa trees)

As always, it’s raw, unpasteurized, and bottled with as little processing as possible to preserve all the goodness the bees worked so hard to create.

Did you know a single worker honey bee makes only about 1/12 of a teaspoon of honey in her entire lifetime? 🐝🍯

This is why honey isn’t a cheap food to produce. Every jar represents the work of tens of thousands of bees over weeks and months, along with the care it takes to keep healthy colonies.

Here’s a look at how we harvest honey, from the hive to the table. 🍯

This harvest came from our mother hive which is our strongest colony in the apiary. Our next stop is to wait for our other hives to finish capping off their honey.

🍯 What Does “Capped Honey” Mean? 🍯

This frame is completely covered in beautiful white wax cappings, a sign that the bees have finished the honey making process.

When worker bees collect nectar, it contains a high amount of water so they repeatedly process the nectar and fan it with their wings to reduce the moisture content. Once the honey reaches the right moisture level, the bees seal off each cell with a thin layer of wax.

The cappings serve as their storage lid and it protects the honey for long periods of time.

For beekeepers, capped honey is our indicator that the honey is ripe and ready for harvest. Some uncapped honey can be mature, but fully capped frames tell us that the bees have done their job and the honey has reached the correct moisture content.

Fun Fact: A single frame like this can hold several pounds of honey, and every drop represents thousands of foraging trips made by worker bees.

Honey bees can forage in a 5 mile radius from their hive though they prefer to keep it down to 2. Have you ever wondered how they seem to just know where their home is?

These are young bees on the outside of their hive for the very first time. They’re hovering at the entrance and circling in figure 8 patterns.

This is called an orientation flight and it helps them learn their location.

Each loop stretches a little farther as they take in their landmarks, where the hive sits, what’s around it, how to find this exact spot again, and their coordinates by creating a cognitive map.

Every forager you see later in the life cycle of a bee started here first, hovering at the door and learning their address.

It was a full weekend… long drive, early mornings, and straight into the Texas heat to get them settled in well.

The bees are already getting to work, and we’re looking forward to watching these hives grow and thrive in the weeks ahead!

We’re incredibly grateful for every season and every step of the process. 🐝
