🍓 Hazelnut & Strawberry Skillet Cake 🍓

Another Cookidoo winner! This delicious cake was the perfect treat for our quick getaway to the Smoky Mountains. Ideal for snacking on during the road trip, enjoying as an evening sweet treat, or packing as a little something extra for a hiking adventure. 🥾⛰️

I don’t make cakes very often, but the combination of hazelnuts and fresh strawberries in this one is absolutely delicious! 😋

My Thermomix did all the hard work, grinding whole hazelnuts into flour, creaming the butter and sugar, and blending everything into a beautiful cake batter. Crushed hazelnuts and fresh strawberries on top add that extra crunch and fruity goodness.

I didn’t bake mine in a skillet, and it still turned out perfectly! The only change I’d make next time? 🍓 Add even MORE strawberries!

🍅 Chicken Meatballs in a Smoky Tomato & Eggplant Sauce 🍆

My garden eggplants are starting to produce, so I searched “eggplant” in Cookidoo®, and this recipe came up, and yes… another winner for our family! ❤️

What I love most about this recipe is that my Thermomix® did it all! 🙌

From grinding the chicken, chopping the zucchini and herbs, and mixing the meatballs, to cooking the smoky tomato and eggplant sauce, risoni (orzo), and meatballs all at once using the Varoma® and layered cooking.

And to finish it all off? A delicious whipped herb feta and some fresh homemade bread😍

One appliance. No extra pots. Less mess. No stress.

This was such a delicious and nutritious meal that feeds six people, possibly more! I added some extra chicken to make a few more meatballs, and they turned out so juicy thanks to the zucchini.

I also used fresh tomatoes instead of canned, and the result was absolutely delicious. 🍅

I love meals like this that make it easy to cook from scratch, incorporate fresh garden produce, and get a wholesome meal on the table without spending hours in the kitchen.

If you need an easy dinner that also makes tomorrow’s lunch… SAVE THIS ONE! 👇🏼

Chicken & Rice Patties popped up as a Cookidoo recommendation, and I’m SO glad we gave them a try!

They’re perfect for a midweek dinner, school lunchboxes, work lunches or an easy snack and they’re a great way to use up a few extra veggies too.

The recipe calls for carrots, but I added some broccoli as well, and they were delicious!

And honestly, it’s the Thermomix doing the prep that makes this recipe a winner for me. 🙌🏼

✨ Cheese grated in 10 seconds
✨ Carrot + spring onions grated in just 4 seconds
✨ Rice and Chicken cooking at the same time AND chicken shredded in the Thermomix
✨ Easy to make a double batch
✨ Flexible enough to add fresh herbs, extra veggies or a spoonful of stock paste for more flavor
✨You can even make these as mini muffins

The 20-minute Thermomix cooking time is my favourite part. 😆 While the Thermomix is cooking the chicken and rice, I can throw on a load of laundry, play with the grandies, answer a few emails or, pour myself a glass of w**e. 🍷😁

And because a double batch is so easy, I can have extras ready for lunches and snacks later in the week.

I also made an avocado cream in my Thermomix to serve as a dipper and WOW. 🥑 It’s so good with the patties, and honestly, it’s delicious with fresh tomatoes too. Another quick little thing I can make from scratch in the Thermomix! Don’t like avocado, whip up a quick garlic aioli in your Thermomix!

Want to make the patties dairy-free? Leave out the cheese and sprinkle with nutritional yeast flakes instead.

This is exactly the kind of meal I love having in my back pocket: easy, family-friendly, adaptable, and the Thermomix does so most of the work, except for a final cook in the oven to get them golden.
