Ever you wonder if canning your own vegetables could actually save you money? I mean forget about the "knowing where my food comes from" or benefits of knowing what pesticides or herbicides (if any) were used. I'm talking about putting some bucks back in your pocket. I did.

So as I sit, looking out at another rainy day here in Virginia, with another pot of green beans cooking as we speak in the pressure canner, I took a few moments to calculate how much it costs me to can those beans per jar and how that compares to an off the shelf can of beans.

These numbers represent my personal experience and are sure to vary amongst growers as many of you may not have access to multiple tons of free goat manure compost as I do, but I tried to consider all the start up costs someone would face in growing & canning green beans. Assuming product and utility costs remained the same (obviously they won't), a consistent harvest, and projected out across several growing seasons. By your 2nd season, your in the green baby!
If I missed anything, please let me know! This was a fun exercise and helped justify all the hard work put into each season. I did not include compensation for the hours and energy spent. I know I couldn't afford myself.😂
