Back at Wintergreen tonight where it is 41⁰ and breezy, but the grill is keeping us warm and bellies full! Tonight it's short rib sliders and smash burgers with caramelized onions, smoked gouda and caramel bacon toppings. Mmmm!

Saturday night, football on the screen and a coffee-cured smoked hanger steak on the dinner plate.

Hanger steak, also known as "the butcher's cut", is often overlooked. The knickname comes from it historically being the cut the butcher gets to keep for himself. This cut has a consistency somewhere between a brisket and a flank steak. When smoked or slow cooked, it is one tender and flavorful cut!
