Spelt flour is an ancient grain, cultivated for thousands of years and popular in central Europe. Unlike modern wheat, which has been intensively hybridized over the last century for high yields, mechanical harvesting, and industrial baking, spelt has remained largely unchanged. It still retains its tough outer hull, which protects the grain from pests and pollutants, preserving its nutrient-dense germ and endosperm. It is high protein, high fiber and highly digestible!
