Farmers market season is officially here! One of my favorite parts about markets is getting to connect with you all, so I’m so excited to get back to it this week!

We will be at 2 markets this week, so stop on by and say hi!

This week’s offerings:

I am planning to focus more on fresh produce this year, but without a greenhouse, we run on the timeline of the season. For now, we work with what we have!

We have been working hard getting gardens planted and prepping for farmers markets. Markets will start in June, so keep an eye out for those dates - hoping to post my schedule soon!

In the meantime, our chickens are happy girls and providing well for us. I will be bringing eggs to markets, but I also have plenty available in May. Let me know if you would like some!

I can deliver to Starbuck daily. Otherwise, I would be able to deliver to Morris or Hancock this Friday or Saturday (May 22 and 23rd).

Have you ever heard of waterglassing eggs?

This was something I researched years ago when we had an abundance of eggs and I was looking for creative ways to use them. I had no idea there was actually a way you could preserve eggs without dehydrating them!

To waterglass eggs, mix 1 ounce pickling lime with 4 quarts water. Put CLEAN, UNWASHED eggs in a jar. This is important because the bloom must be intact. This cannot be done with store bought eggs. Cover the eggs completely with the pickling lime/water mixture and hand tighten the lid. You can store them at room temperature and they will keep for 12-18 months.

The lime essentially fills in the microscopic pores in the eggshells which slows down the airflow and prevents bacteria from spoiling the eggs.

I’ve been doing this for years and have very rarely had a rotten egg (maybe 2-3 times). It usually happens when an egg cracks somehow and I don’t notice. Otherwise, the eggs taste like normal, fresh eggs! Biggest differences I’ve noticed are a more fragile shell (so they don’t hard boil well) and a runny yoke (no over-easy eggs). Otherwise, they are perfectly normal even a YEAR later! Total game changer for us and has helped us have farm fresh eggs even when our layers are taking a rest from producing.

Hey, friends!

It’s been 2 years since I started this adventure and there are so many new faces here that I wanted to reintroduce myself! My name is Lauren Combellick and my husband, Colter, and I have three sweet boys that we are raising on our 10 acre homestead near Starbuck, MN.

I have been gardening and baking since I was a kid, but homesteading has really become a huge part of my life in the last several years. It sort of started as a hobby and a way to do things ourselves to cut costs, but it blossomed into a lifestyle that I truly enjoy and am excited to teach my boys about. Today, our family focuses on gardening, food preservation, and raising chickens for both farm fresh eggs and meat. I also have become passionate about cooking/baking from scratch and reducing the toxins in our home.

I see myself as a lifelong learner. Homesteading is a broad category with lots of different areas to dive into. It’s impossible to always do everything yourself, but I love learning new things from others and I’d love to share the knowledge I’ve gained as well.

I am currently registered as a Cottage Food Producer in Minnesota and will be posting seasonal offerings on this page as they become available. This is something I’m hoping to continue to expand moving forward. We will also be present at local farmers markets again this summer.

We have lots of exciting plans for this business for the future, including opening a farm store. More to come on that later, but I wanted to introduce ourselves to you again as we look forward to a busy summer.

I will be at the Pope County Farmers Market tomorrow, August 30th. This will be my last market of the summer, so make sure you come get yourself some goodies! My items generally freeze well, so now is the time to stock up!

I want to highlight that the items with apple in them are made with apples from our own trees, so you're getting the very best, local ingredients when you purchase from me!
