Vegan Cooking Class (Saturday, August 3rd, 2024, 10 am to 1pm)

If you like Indian food and have modified your diet to exclude meats and animal by-products, sign up for this special vegan class. Feel free to pass this on to friends/family who might be interested. I prefer a maximum of 6 people, since the class is hands-on. You get recipes at the end of the class and we end with a meal.

Menu:

Vegetable Fritters in a chick pea batter (Bhajjiyas) – Our appetizer along with Indian ‘ginger chai’
Lentil curry (in a creamy coconut milk sauce) – Main dish
Alu Gobi (Cauliflower & potatoes) – side dish
Basmati Rice (Long grained fluffy Indian rice)

None of the dishes use any animal products or by-products so it should satisfy the most discriminating vegetarian/vegan 🙂

Had fun cooking Beef Chilly Fry for the weekend. Brings back memories of my grandma’s and mum’s cooking.

Ingredients:

1 lb beef cut into 1/4" pieces
2 medium sized onions chopped julienne style
2 green chillies slit lengthwise
1 potato cut into 1/4 " pieces
1 tsp turmeric
1 tbsp brown sugar
1 Tomato (optional)
Salt to taste

Marinade:

1 tsp black pepper powder
1/2 tsp clove powder
1/2 tsp cinnamon powder
3 tbsp garlic ginger paste
4 tbsp Malt vinegar
1 tsp Kashmiri red chilli powder

For the marinade,add salt, black pepper, cloves and cinnamon along with the ginger, garlic, malt vinegar and red chilli powder to the beef, mix well and marinate for an hour.

Cook the marinated beef (without any oil ) for 30 minutes, in a non-stick pan stirring often until the liquid evaporates. In a separate pan, heat 3 tbsp of oil over medium heat. Fry the green chillies for a few seconds and then add the onions and potatoes and cook on med heat until the onions are soft and slightly charred (about 15 mins). Add the turmeric and mix well.

Add the onions and potatoes to the beef, along with the brown sugar and salt. Cook for another 5 minutes. Add 1 tbsp lime juice. Stir well and then garnish with chopped cilantro and some sliced tomatoes.

Enjoy with some Indian flatbread (chapati/paratha/roti).

Excited to be teaching a TED Talk style class at my company (American Woodmark) today. The topic is Healthy Cooking (Indian Style) and folds into a series of talks/events we are doing at the company on Healthy Living. We will be talking about the health benefits of spices used in Indian cooking, something India has intuitively known for hundreds of years, but the West is only just discovering. And, we will be cooking a lentil curry dish (Dhal), using a recipe native to the kingdom of Nepal. I'll post pictures of the event later.
