Itโs the second encore no one saw coming. Polvo Pils, our 4.6% Czech-style pale lager, has returned. Batch 3. Because if the people want more Polvo Pils, the people get more Polvo Pils.
A single-decocted and naturally carbonated labor of love, our collaboration with eternal guitar gods Polvo has quickly become one of our favorite beers. And much like diving into Polvoโs knotty discography on Merge Records and Touch and Go Records is a rite of passage for indie rock nerds, a LUKR-poured dimpled mug of Polvo Pils is a discovery awaiting any visitor to Ocelotโs tasting room.
Polvo Pils aspires towards the platonic ideals of Czech classicism: satisfying malt depth balanced by firm, but not distracting, hoppiness. Weyermann Bohemian Pilsner Malt โ floor malted in Czechia using regionally grown heirloom barleys โ imparts notes of earthy honey, bread, and biscuit. Czech Saaz counters with a bouquet of fresh-cut herbs and grounding earthiness. In a lager conditioned for almost three months, the two seamlessly enmesh. Itโs total immersion, one might even say.
There is perhaps some irony in this equilibrium given Polvoโs penchant for off-kilter rhythms and general aversion to orthodoxy. But the Czech pilsner is an undisputed classic, and as far as weโre concerned, so is Polvo. Plus, as it turns out, the band just really digs a clean lager.
