It may be September 1st but we have a bit of time left with our beautiful Panzanella Salad. Dating back to at least the 14th century “bread salads” were a way to make use of stale bread by softening it with water and tossing it with vinegar and whatever herbs and greens were available.

🍅 Today we indulge in a little luxury by making our own homemade focaccia, sliced fresh, and tossed with local tomato, cucumber, and shallot, topped off with sherry vinegar, olive oil and flaky sea salt.

August here in the Paulinskill Valley has been sunny, stormy, humid, and all the produce of summer is ripening faster than we know what to do with it — which is why we’re putting it all on our menu. Juicy tomatoes at their peak, lettuce, peppers, zucchini, corn, eggplant, and cucumbers from our local farm partners make this month’s menu sing.
