The 'little egg stand on 20' had a rough start to the season. First the wind blew it over and broke the trusty little fridge. We had some really strong tie downs, but they were no match for the South Dakota straight line wind. The replacement fridge was freezing eggs without us realizing it (we apologize, if you got eggs that had a different, 'off' texture, please feel free to grab some to make it right). But we think we've got it worked out now!
We try not to wash the eggs, as it removes the protective coating, but we will wash the eggs that are obviously gross and dirty. We also candle the eggs to make sure there are no cracks in the eggs we put out in the stand.
