To celebrate my video on the culinary history of apples, I'm including a fun twist on a savory apple-forward appetizer that would go perfectly as a starter for the holidays!

Savory Apple Wonton Bites

36 wonton wrappers
2 tablespoons vegetable oil
½ lb tiny cooked shrimp, shelled & deveined OR 2 cups deep fried tofu, chopped small OR 2 cups hard boiled eggs, sliced
2 scallions, chopped
1 stalk of celery, diced
2 tablespoons Japanese Mayo
1 teaspoon Miso paste
1 teaspoon wasabi paste (optional)
3 sour apples (like Granny Smith or similar), peeled & grated
1 tablespoon nutritional yeast
Zest & juice of 1 lemon
Salt & pepper to taste

Preheat oven to 350°. Grease Gem size muffin cups (the 1 ½ inch ones) with vegetable oil. Press one wonton wrapper into each cup. Bake for about 10 minutes, or until golden.

Mix remaining ingredients, salt & pepper to taste, and serve by spooning into the wonton cups.

I have several protein options in this recipe, because the original comes out like a delightful shrimp salad, but some folx would prefer to stay away from shellfish... I've found that increasing the eggs make a wonderful egg salad style version, and the tofu is chewy and rich as a vegetarian option. You can sub out the mayo and other ingredients for your favorite vegan options, too.
