When we talk nerdy about mushrooms with folks there’s a reason you won’t hear me answer questions with clear black and white answers. Mushrooms are famous for proving the “rules” wrong. For example, varieties of shiitake are “meant” to fruit within certain temperature ranges. In fact, we select which varieties to dunk and force fruit week to week based off of the 10 day weather forecast. You’ll find them categorized in cold, warm, and wide range fruiting groups. The logs fruiting naturally after a big rain this week? They are from all 3 categories. Snow Cap shiitakes like to fruit when the temps are 41-65 deg. Night Velvet prefers temps closer to 80 deg… all fruiting the same week? Exceptions, always exceptions to the “rules”.
