🐏This weekend and we will have a *limited* supply of roasts from painted desert sheep raised by our friends

🍖These mutton loin, rib, shoulder, and leg roasts are incredibly tender with a mild and delicious lamb flavor. Processed at 13-14months old they are required to be labeled as mutton but we highly recommend you cook them no differently than any lamb you’ve had and enjoyed before.

‼️We expect these cuts to sell out this weekend based on demand and our inventory- so DM, text, or email us to reserve one ahead of time!

Introducing… the Merguez✨

Made from our whole animal grass-fed Painted Desert Sheep ground mutton, this classic North African sausage is rich with smoky paprika, cumin, cayenne, and other spices. We thawed a pack as soon as we got home from picking them up from the processor and wow, they are good! Juicy, uniform texture, with a hint of full flavor heat.

Lesbi-honest… the intersection of where ethical meets economical is where most of us want and need to be when it comes to our food.

Enter: Off cuts. Bones. Organs. Nose to tail. The whole hog. Granny’s giblet gravy.

We have a lot of tips and tricks for incorporating these cuts into your rotation but today we will focus on PORK BONES.

At $2/lb and most bags weighing in between 2-4lbs, it is our most affordable offering and comes with a surprising amount of meat still on the bone!

Fav recipe: We love adding a bag of pork bones, dried beans of your choosing, water, and a scoop of creole seasoning to the instant pot. When it’s finished, your beans will be infused with the flavor and nutrition of the bones, which will be easy to remove with tongs afterwards as all the meat will have melted into the meal. Cheap. Easy. Feel good meal prep.

Y’all! That was awesome!! thank you for collectively creating space to gather, share, be ourselves, and build resiliency. I’m so grateful for the opportunity to share about mushroom inoculation and to listen and learn about riot games, gardening plans, protecting your home from flooding, staying warm when infrastructure fails, and caring for each other when it gets hard.

🍄‍🟫To everyone who took home an inoculated log today, here are some after care details and an invite to reach out anytime you have questions:

1) you are now the proud parent of an oak log inoculated with ‘bulochka’ shiitake spawn.

2) take it home and place it outside in full shade, protected from wind, off the ground a couple inches, and where rain will fall on it.

3) check for signs that the mushroom magic is working. In a couple months on the end grain of the log there should be a ring of mycelium.

4) starting in September, check for signs of fruiting after every good rain. You may see little “pins” popping through the wax plugs when it’s starting to fruit. But also, don’t worry if you don’t see anything this year, it may take until next spring to fruit the first time.

Anyone else feeling the desire to cook outside? This false spring is worth taking advantage of! Pick up a pack of sausages or chops from us tomorrow 8a-12p and set yourself up for some seriously marvelous food joy.

All sausages are packed in ~1lb increments and range in price from $10-$12 per lb.

Ever curious about how much something will cost? We are beyond happy to pull options from our cooler and put it on the scale before you make up your mind. It doesn’t benefit us (or any of our fellow vendors) to have you walking away feeling regretful about the money you spent. We are in the REPEAT customers business 🫡

Oh and as ever and always, we LOVE being at farmers markets that work hard to accept and DOUBLE your snap benefits. You ask for $50 taken off of your ebt card at the market booth, and you receive $100 in market tokens in return. Those tokens never expire. So for everyone who has access to that benefit, you can basically think of everything on our menu as half off. The meat you purchase at the grocery store costs full price… at the market? It’s 50% off. 🙀🙀

So from one ebt recipient to another, it’s worth doing the math next time you shop for your meat. With the snap double bucks program at market, we are sometimes the best price around!
