If you only bake with chocolate chips, THINK AGAIN. Chopped chocolate is a game changer.

Use a serrated knife to chop chocolate into rough pieces. Different shapes and sizes of chocolate will give your cookies more textural interest. Big gooey chocolate in one bite, small flecks in another.

We at Chocolates El Rey USA have had our stomach in knots as we've watched updates from the Venezuelan earthquakes. We are deeply relieved to learn that none of the employees at the El Rey headquarters in Caracas were involved in the disaster. Additionally, our factory in Barquisemeto and our cacao groves are far enough away from the epicenter and were not affected.

We thank all our customers who have expressed concern for our staff. Our hearts are with those who are grieving or still searching for loved ones.

Cacao trees only grow in a specific equatorial band called the "Cacao Belt," which sits within roughly 20 degrees North and South of the equator where the climate is hot, humid, and rainforest-like.
