First up is Spaghettied Spaghetti Squash.

Ingredients: spaghetti squash, shredded mozzarella, pasta sauce, olive oil, garlic powder, paprika, cumin, salt and pepper.

Preheat oven to 425 and line a medium sized pan with foil.

Cut spaghetti squash in half long ways (hot dog style for my 90s kids friends) and scoop out the guts. Place on foiled pan scooped side up

Spray a light coating of olive oil spray or a drizzle of oil on the scooped out side of the squash. Sprinkle with garlic, cumin, paprika, salt and pepper to taste. Flip so the seasoned side is down and bake for 45 minutes.

Remove from oven and flip bake over. Take a fork and scrape against side pulling the squash meat towards the center and thus creating your ‘noodles’ add 1/3-1/2 cup of pasta sauce and 1/4 cup of cheese to each half of squash.

Replace in the oven for 10 minutes or until cheese is melted. Remove from oven, stir together and enjoy!

Can be made vegan with the use of vegan mozzarella.

For meat lovers: the addition of crumbled Italian sausage would make this very tasty!

Hey everyone. A number of my friends and co-workers have said they really enjoyed seeing my food posts across various social media platforms. I have since decided to start a food blog of sorts so I have a place to post my recipes and talk about all the awesome food places I frequent when the world isn’t shut down.
