I am no longer Kevin. I am Jay. It makes sense ok.

Last week for the Al Pastorva Coleman over at .cafe 🍄🥪

Al pastor mushrooms, rojo salsa, feta, tortilla strips, black
bean mash, lime aioli, pickled jalapeños and red onions,
cabbage slaw with pineapple/ white onion and greens on
house-made focaccia.

Donko shiitake?!?!?!?

Also known as "flower shiitake", they are prized as high quality, meaty mushrooms, typically sold dry. They are also usually grown from outdoor logs...but here we have some almost-donko shiitake straight from our grow room.

How did we do it? Well I'll give you a hint.

It has to do with our compressor breaking.

Along with a slew of other mishaps.

Perhaps a mushroomy silver lining?

Can we do it again? We'll see. Always experimenting in the shroom room.

In September, I had the honor of leading 50 builders through the woods on a fabulous foray as part of .

It was a great time teaching folks about the unfathomable diversity and interactions among fungi and all the other organisms in the forest! And likewise, it was fun learning about the parallels between decentralized networks and ecology. Truly an amazing day I'll never forget.

I honestly think the best part of working with restaurants is selling them mushrooms so I can buy back the delicious food they make with my mushrooms. Self interested? Perhaps. Delicious? Absolutely.
