Honey Isn't Always Ready to Harvest

Did you know when bees collect nectar from flowers, it's about 80% water?

Once they return to the hive, the real work begins. The bees process that nectar into honey by repeatedly passing it between each other and fanning it with their wings to slowly evaporate the excess moisture. This takes time, which is why honey isn't always ready to harvest.

Beekeeping involves more than simply collecting honey, it's about knowing when it's truly ready. Harvesting too early can lead to fermentation and spoilage.

For the best quality:

Less than 17.5% moisture is ideal to help prevent fermentation.
17.25% to 18.6% moisture is generally considered stable when stored properly.
19% moisture or higher increases the risk of fermentation because naturally occurring wild yeasts can become active.
I use a refractometer (like mine shown in the photos) to measure the moisture content of my honey. I only harvest when it reaches 15% to 17% moisture, ensuring a high-quality honey that's naturally thick, flavorful, and shelf-stable. This is an example of my recent harvest.

Don’t confuse Fermentation with Crystallization, a subject for the next chapter of Beekeeping.

Patience is one of the most important ingredients in producing great honey—and the bees do most of the hard work!

This morning I traveled to the quiet, rural community of Indian Town to visit the Martin County Public Library and share the amazing world of honey bees with children and parents.

We talked about why honey bees are so important to our environment, the role they play in growing the food we eat, and simple ways everyone can help protect and save these incredible pollinators.

After the presentation, the children had the chance to put on a protective bee veil and “Bee a Beekeeper” for a moment, experiencing a small part of what it’s like to care for these amazing creatures. The excitement continued as parents gathered for photos with Bob and the kids, capturing memories from a fun and educational morning. I’m always impressed with the energy, enthusiasm and very good qiuestions from them.

Time to begin the Summer harvest. The hives are heavy with beautiful, delicious Honey! From here we take these frames to get uncapped and spun out. Stay tuned.

What am I excited about this Saturday in Tropical Farms? (Stuart, Florida)

I’m getting everything ready to welcome the awesome girls from Girl Scout Troop 32014 as part two “Learning about Bees”. They’ll be coming out to Bob’s Bee Farm, along with their parents, for a close-up look at live bees in the hives.
We’ll also be harvesting fresh honey, spinning it right out of the comb…and each Scout will get to bottle their own honey bear to take home.
It’s shaping up to be a really SWEET afternoon. Big thanks to Troop Leader Kristin for putting this together!
We’ll be getting started around 2:00 pm—and I can’t wait.
If you happen to be passing by, give the young ladies a “Honk” to say hello.

A beautiful day in Johnathan Dickinson State Park at the Springfest event. Today, I was there to support our Treasurer Coast Beekeepers Association, educating the public on the wonderful World of honey bees and selling honey.

Doing another Bee colony relocation from 2 very large separate flower pots in the same yard. Each colony was well established with great brood comb and honey. Used the BeeVac for this one since they were difficult to capture in these very tight space
