We are currently sold out of chicken, but our next harvest is scheduled for Monday, so more will be coming soon.

New to cooking pasture-raised chicken? Here’s one tip that makes a huge difference: use the thermometer, not the clock.

We’ve picked up quite a few new followers and customers recently, so we wanted to share a quick cooking tip, especially for anyone who is used to conventional grocery-store chicken.

Pasture-raised chicken can cook differently. Our birds spend their lives moving around, developing more muscle, and they are not relying on added moisture solutions to create tenderness in the finished product.

That means overcooking matters. A lot.

If you cook a pasture-raised whole bird exactly the same way you’ve always cooked supermarket chicken, especially by time alone, it can come out dry and tough.

Use a proper meat thermometer.

Check the thickest part of the meat without touching bone and cook to a safe internal temperature of 165°F, then let the bird rest before carving.

That little change helps preserve the moisture, texture, and rich flavor that make a true pasture-raised chicken worth eating in the first place.

So if you’re new to pasture-raised poultry, don’t overthink it:

Use the thermometer instead of the clock.

Your chicken will thank you. 🐔

Hopefully the later hours make it easier to stop by after work, school, or afternoon errands.

If you enjoy having a midweek farmers market here in Suffolk, please come out and support it! Bring your friends, bring your neighbors, and help us keep this little market growing.

Depending on the week, you can find local chicken, eggs, produce, honey, mead, crabs, sourdough, plants, and more.

And since we’re already at Country Boys BBQ, you might as well grab some BBQ to take home for dinner too. Hard to argue with accomplishing grocery shopping and avoiding cooking in the same trip.
