Sugar Valley Beef has the last of the 2024 steers available. One grass-fed Black Angus has a processing date of August 14 and there is half of a steer for September 11. The custom cut, vacuum sealed beef will be ready approximately 2.5 weeks after processing.

My friend, Fernanda's, excellent recipe for Black Angus Flank Steak: Place the flank steak in a deep dish (or plastic ziploc bag) to marinate for 24 hours, with 1/2 cup olive oil, 1/2 cup soy sauce and 1-12 oz beer. For a spicier flavor, sprinkle the meat with Montreal steak seasoning.
Grill steak over medium-high heat 5 minutes per side and finish cooking over indirect heat until steak reaches an internal temperature of 125°F for medium rare. Rest at least 5-10 minutes before serving.
Slice thinly across the grain to serve.
