Sold out if almost everything last Sat so have been freeze drying like a mad man all week. Just finished up a load of jolly ranchers aka cotton balls for Sat. I am now making up some regular and sour skittles, gummy bears and marshmallows.

Going to miss this man. I am sad to say we lost another member of our market family yesterday. He was known as Big Daddy and it was a rare day when he wasn't there with a cowboy hat and leather vest on. He ALWAYS had a smile for you, esp the kids and once you were one of his there were hugs. I can't even count how many bags of pork rinds he has gifted the kids and I over the years. The kids grew up at the market helping work my stand and they would almost always come back from a walk around with a bag of his rinds or sometimes his cracklings. He never let me pay him back. Every Sat he would usually be packed up and leaving before me and he would drive his truck around to my side and hit the horn. Sometimes he'd ask if I needed help, sometimes he'd say see you next week and sometimes it would be a simple wave and smile with a dip of his head. Rest in peace Big Daddy, we love and miss you.

Christmas Peppermint Nougats-
Rolled these out, pre- warmed them to get them nice and soft than freeze dried them. Can't believe how big they got. They literally melt in your mouth. They are light and airy with a nice crunch. Available now as home pickup.
Samples will be available this Sat at the Winter Farmers Market located at Coastal Coffee Roasters in Summerville. $5 per 1 ounce bag, $8 for a 2 ounce bag.

Christmas Trees: 2 per package. The inner and outer icing on these stays soft while the cake part becomes crunchy with a cookie type texture. SO DELICIOUS!!!!! Because of the icing these have to be frozen first than freeze dried at a lower temp so it takes 2 days to make them. 8 packages available with another 8 finishing later this evening. Get them while you can! $6 each.

Starburst will be back in stocks tomorrow. This what 120 double stacked starburst that have been quartered for freeze drying looks like. It took 3 attempts to get them light and airy. Pre heat for 30 minutes at 150 degrees. The ones on the metal trays go in 1st while the silicone trays are filled. Than I add a spacer a d move the metal trays up over the silicone ones.

As promised I have been working on organic and keto candy. This is what I have so far and it's very limited. Keto candy has been a total failure at this point. It just won't freeze dry. The organic has been hit or miss. Mostly on point. The issue is it is drastically more expensive to buy and it takes 2-3 times longer to freeze dry so I may do the organic candy on request. Out of 5 different bags one failed to puff up but it did EVENTUALLY loose it gumminess and developed a nice crunch to it. The squiggles didn't puff up a lot so next time I'll pre warm them and see if that helps them get bigger. The suckers came out neat. Light and melt in your mouth airy at 1st than a light but firm crunch in the middle. These are going to be hit or miss on finding as this bag was the only one I saw and it is a halloween one. The gummy bears came out perfect and I know :) unfortunately the Yum Earth didn't puff up at all and they took the longest to get crunchy at 24 hours.

Who would be interested in a mix of candies? To see which you like best without having to buy a full bag of each one? It would be small amounts of several different candies. A few skittles, 1 or 2 jolly ranchers, 3 or 4 nerd clusters, lemon heads, etc.....
