Dough Days 🤍

Every dough day begins at 4 a.m.

It starts with a strong, well-loved starter, spring water, freshly milled grains or organic bread flour & french grey salt. That’s it. 4 things.

It takes strength to lift pounds and pounds of dough from the mixer & strength again to stretch and fold each batch by hand.

Patience to allow the dough to rise in its own time.
And knowledge to recognize that perfect moment when the dough is ready for the next step.

Dough day is a process.

A slow, beautiful process that can’t be rushed. Every loaf is shaped by time, care, and intention.

I love every step of it 🤍
