What is the DIFFERENCE π§π»βπ³ππ
Between Whole Wheat & Bolted Flour You AskβοΈ
WHOLE WHEAT
β’ Composition: Contains the entire wheat berryβendosperm, germ, and all the outer bran.
β’ Texture & Baking: The sharp, heavy bran flakes cut into gluten strands, resulting in a denser loaf with a tighter crumb structure.
β’ Flavor & Nutrition: Maximum fiber, nutrients, and a heavy, earthy whole-grain flavor.
BOLTED (High-Extraction Flour)
β’ Composition: Stone-milled grain that has been passed through a sifting cloth or screen to remove a portion of the larger bran particles (typically keeping around 80% to 85% of the total grain).
β’ Texture & Baking: Behaves as a middle ground between whole wheat and all-purpose white flour. It allows for better gluten development, giving bread a lighter texture and more loft than 100% whole wheat while retaining much of the germ and flavor.
β’ Flavor & Nutrition: Retains most of the nutritional and oil-rich benefits of the wheat germ with a milder, less bitter taste than full whole wheat.
