7 years plus 2 days

I’m 2 days late on this but on September 5, 2019, it was the last day I stepped foot into a prison and stepping every day into the unknown of starting a business.

The past 7 years have been full of ups and downs, lefts and rights, tears, smiles, joy and so many other emotions.

To this day I would not exist without my God and my Wife, so for them I am grateful. Having a solid foundation is a key to success, continuing to have the drive to keep is another.

My goal for a brisket was to get flavor on the inside. Hard to do. I don't like to do all the injections folks do on competition cooks. I want you to just taste the meat — but I want that meat to be enhanced.

So we started dry brining. Our brisket is now a 3-day process — similar to the best barbecue joints in the country. Nobody gives you the secret. You've got to figure that out on your own.

This is WIsconsin Craft Barbecue. It's not fast. It's not supposed to be.
