How did your family make meatloaf? I grew up in a family that used bread chunks for the binding; I know some use bread crumbs, crackers, even oatmeal, but we used bread. At some point around 10-11, I decided that was the grossest thing ever (hello texture issues) but since you ate what mom cooked, if I had to eat it, I would eat around those pieces of bread. I was a super weird kid.

Fast forward a few (30ish, but who's counting) years, and I am back to loving the bread pieces in meatloaf. I had some leftover Bountiful Beer Bread samples from the show this weekend and it seemed like a great opportunity to make a meatloaf, so that's what was for dinner this week.

I typically use Onion Onion and a dash of Garlic Garlic in my meatloaf, but having the Beer Bread in there instead of just leftover bread or rolls was even better. It had a bit of a sweeter flavor, maybe? Not sure, but what an easy way to use up leftovers.

I know you all anxiously await this post each week and I have been remiss in posting. Last week's recipe was a fail for me (it was a stromboli, who messes up stromboli) and instead of posting it, I opted to retry it in a week or so and actually pay attention to the recipe so I can give it a fair chance. No reason to knock it because I used the wrong pineapple and it was too wet.

Which brings me to this week. I have a show next weekend and am trying to not go into my stash too much, but I did have a sample pack of the Absolutely Almond Pound Cake, so I picked a recipe to use that up. Absolutely Almond Blueberry French Toast Bake fit the bill as something that would work as a meal and not just a dessert.

I baked the cake yesterday so it would have plenty of time to cool, and assembled the bake this morning so it could set for several hours before dinner time. To the layers of pound cake, I added chunked cream cheese and blueberries, then poured the egg mix (eggs, half & half, cinnamon, and vanilla) over the top, then popped it into the refrigerator.

It calls for an 8x8 pan, but I went with an oval because it had a lid. It bakes 30 minutes covered, 30 minutes uncovered, but that wasn't enough time. I put it back in for an additional 30 minutes covered because the top got toasty, but the center finally set. Next time I will try a 13x9 so it bakes quicker, or maybe even the slow cooker.

And there will definitely be a next time. This was so good, and I have high hopes for the leftovers tomorrow. It makes plenty, and would make a great breakfast for company this holiday season. Shop here: https://www.tastefullysimple.com/?ref=melindamarinelli10533

Since I apparently had 3 bottles of Bayou Bourbon Sauce, I opted to try a new recipe this week, Apple Bayou Pork Chops and spoiler alert, they were delicious.

Me being me, I made some substitutions, starting with putting everything in the crock pot instead of cooking it in the oven - so much easier -and crock pot liners are a blessing from the gods. I said what I said.

Also, I didn't want bone-in pork chops so I went with thick-cut chops and my local grocery stores don't sell Apple Cider Bourbon (and I wasn't going to buy apple cider as I'm not a fan), so I substituted an apple bourbon BBQ sauce from Kinder's. To the bottom of the crock pot, I added half the Bayou Bourbon and a generous sq**rt of BBQ sauce, placed the pork chops, then decided to add some Garlic Garlic over the top. From there, I added the rest of the Bayou Bourbon and another generous amount of the BBQ sauce and let it cook for 4 hours on high.

When the chops were done, I sliced some honey crisp apples and cooked them down with a pat of butter and a bit of sugar, as the recipe instructed. I had been tempted to throw the apples in the crock pot too, and am so glad I got distracted and didn't.

The pork chops were very tender and I could almost cut them with a fork. Layering sauce on both sides and letting it just sit in the crock pot, the outsides got that nice thick layer of sauce soaked in. After plating the chop, I added some of the apples on top, which was the perfect addition and was a very nice sweet to go with the savory. Next time I will add some apple cider/juice to the pork because it was missing just a little something; or maybe I just needed more fresh apple on top. Either way, this will be a definite repeat. Since I know y’all are taking notes on my weekly posts, remember the One Pot Marry Me Chicken several weeks back? Where the Seasoned Pepper was a new-to-me product and it was spicier (IMO) than expected? And then the following week I tried the One Pot Queso Beef and Rice and I ‘bragged’ that I had learned my lesson and sampled the Mom’s Favorite Taco Seasoning before just dumping it in, because that was also a new-to-me product? Fast-forward to this week and I admit to my faults, namely being an idiot.

This week on the menu was the One Pot Mandarin Orange Beef, with TS products Onion Onion, Garlic Garlic, and Fiesta Party Seasoning. I added the Onion Onion to my flank steak in the crockpot, letting it cook for a couple hours before adding the Garlic Garlic, mandarin oranges, marmalade, soy sauce, and Fiesta Party Seasoning. That’s another new-to-me product that I have obviously paid no attention to for the 15 years overall that I’ve sold Tastefully Simple and did not realize it’s at the top of the spicy scale we, apparently, offer.

The verdict? Aside from the fact that it made my mouth tingle, I really liked it. I will, however, cut back the Fiesta Party Seasoning when I make it again, but it had a nice, light mandarin flavor that nicely offset the beef. Added bonus, it smelled fantastic cooking.

My one complaint about the directions, is that after the beef and Onion Onion cook for 3 hours, you’re supposed to remove half the liquid. What does that mean? How much should I have left? If it creates a cup of liquid and I remove half, okay, but what if it only creates 3 Tbsp of liquid? Those comparisons don’t make sense, why not just tell me how much liquid you want before I need to add the other ingredients? My beef left very little liquid, so I didn’t remove anything, but it drove me crazy all night. Even now, I’m irritated. Okay, rant over.
