Oh we pine for pie, don’t we? Here is one inspired by a recipe from the Dinosaur Bar-B-Que Cookbook by John Stage and Nancy Radke. Sweet Potato Mincemeat Pecan Pie. Makes one 9-inch pie. Pie Ingredients: 1 - 9 inch unbaked pie crust; 2 c. cooked sweet potatoes, puréed ( one pound sweet potatoes peeled and cooked should do it); 2 eggs lightly beaten or plant-based sub; 1/4 c granulated sugar; 1/4 c brown sugar; 1/2 tsp cinnamon; 1/2 tsp allspice; 1/4 tsp salt; 1 tsp grated lemon peel; 3/4 c heavy cream or plant-based sub; 4 Tb butter, melted, or plant-based sub. Topping: 3/4 c chopped pecans; 1 c FSP All-Fruit Mincemeat; ; 2 Tb butter, melted, or plant-based sub; 1 tsp vanilla; 3 Tb maple syrup; 2 eggs, beaten, or plant-based sub; pinch salt. Procedure: 1) Pre-heat oven to 350 degrees F; 2) Make the filling: Mash the sweet potatoes in a large bowel. In a small bowl, combine the eggs, sugars, spices, salt, lemon rind, cream, and butter and whisk until blended. Add to the sweet potatoes and stir thoroughly. 3) Make the topping: In a separate bowl, stir all the topping ingredients together. 4) Assembly: Pour the filling into the pie crust, smoothing the surface. Put the topping over the pie, spreading evenly. Bake for 55 to 65 minutes until set in the middle. Many thanks to recipe tester Judy Poltenson for her excellent suggestions.
