Pepperoni & Mozzarella Pull-Apart Bread
(Golden, cheesy, pepperoni-loaded pull-apart rings — zero carbs, maximum flavor!)
Ingredients (serves 8–10):
Dough:
2 cups shredded mozzarella cheese
2 oz cream cheese
1¾ cups almond flour
1 large egg
1 tsp Italian seasoning
½ tsp garlic powder
Pinch of salt
Filling & Topping:
4–6 oz pepperoni slices (mini or regular, cut in half if large)
2–3 cups shredded mozzarella cheese
2 tbsp butter, melted
1 tsp garlic powder
1 tsp Italian seasoning
Fresh parsley for garnish (optional)
Quick Steps:
Preheat oven to 375°F (190°C). Grease a bundt pan or ring mold generously.
Make fathead dough: Microwave mozzarella and cream cheese until melted (1–2 minutes). Stir in almond flour, egg, Italian seasoning, garlic powder, and salt until a dough forms. Knead briefly on parchment until smooth.
Roll or press dough into a large rectangle. Cut into 1.5–2 inch squares or pieces.
Wrap each piece of dough around a pepperoni slice (or tuck pepperoni inside). Place pieces into the bundt pan, layering with extra shredded mozzarella between them.
Mix melted butter with garlic powder and Italian seasoning. Brush generously over the top.
Bake 25–35 minutes until deeply golden and bubbly. Let cool in the pan for 5–10 minutes, then invert onto a plate.
Garnish with parsley and serve warm — pull apart and enjoy!
