One of the defining traits of California’s Central Coast Cabernet Sauvignon is the influence of cool Pacific breezes and persistent marine fog, which slow ripening and extend hang time. The cold California Current generates a marine layer that regularly pushes inland through coastal gaps, dropping growing‑season temperatures by 8–15°F and lengthening maturation by two to three weeks. This prolonged, even ripening allows Cabernet grapes to develop deeper phenolic concentration, richer dark‑fruit character, and balanced natural acidity. Hansen Vineyard’s 2020 Cabernet Sauvignon reflects this coastal signature, showing dense blackberry and dark‑cherry compote notes, a plush mouthfeel, and a decadent finish — qualities the w**ery attributes to the region’s cooling Pacific winds that keep grapes on the vine longer and enhance flavor complexity.

Paso Robles has come a long way since Spanish missionaries first planted grapes here in the late 1700s.
Today, the region—officially established as an AVA in 1983—still honors its heritage with old‑vine Zinfandel, but its identity has expanded far beyond that.

Cabernet Sauvignon and other Bordeaux varieties now dominate the landscape, and starting in the 1980s, Paso became a hotspot for Rhône grapes like Syrah, Viognier, and Roussanne.

It’s a region defined by history, reinvented by innovation, and driven by w**emakers who keep pushing the boundaries of what Paso Robles can be.
