Jack fruit upside down cake

Yield:
1 -9 or 10 inch round cake
Ingredients
½ cup butter
1 ½ cups brown sugar
10 pieces of jackfruit were removed from the seeds and chopped
1/2 cup unsweetened dried coconut
1 (18.25 ounce) package yellow cake mix

Step 1
Melt the butter over medium-high heat in the iron skillet. Remove from the heat and sprinkle the brown sugar evenly to cover the butter. Next, arrange the jackfruit around the bottom of the pan and sprinkled the dried coconut over the Jack fruit. Prepare the cake mix as directed in the box. Pour the batter over the jackfruit layer.

Step 2
Bake as directed by the cake mix directions. Cool for 10 minutes, then carefully turn out onto a plate. Do not let the cake cool too much or it will be stuck to the pan. Enjoy!

My favorite Caprese with roasted eggplant.
1 eggplant, sliced into ½-inch rounds
Salt
3 large or steak tomatoes, sliced into ½-inch rounds or Cherry tomatoes.
Extra virgin olive oil
20 basil leaves, more for the dressing
16 Oz. fresh mozzarella cheese, sliced
Riped avocado sliced (optional)
¼ cup extra virgin olive oil
1 tablespoon aged balsamic vinegar
Salt and pepper
Preheat the oven to 425 degrees F.
Spread the eggplant slices on a large tray and sprinkle generously with salt. Leave for 30 minutes; the eggplant will "sweat out" it's bitterness. When ready, pat the eggplant dry. Place the eggplant slices on a large baking sheet. Drizzle with olive oil. Roast in the 425 F degree heated-oven for 10-15 minutes. Remove from the oven and let it cool down.
Layer egg plant, tomatoes, mozzarella cheese, basil and avocado. Drizzle over the olive oil, balsamic vinegar and season with a little extra sea salt and pepper.

TRADITIONAL SOURDOUGH BREAD RECIPE
Ingredients:
2 1/3 cups fresh sourdough starter
3 1/3 cup flour
1 to 1 1/2 cups water
Scant tablespoon salt
Instructions:
Mix sourdough starter, flour, and salt together. Add 1 cup water, then more as needed to make a moist bread dough.
Knead dough until it passes the “window pane test.” That is, a small piece of dough will stretch between four fingers thin enough to allow light to pass through without breaking.
Split the dough in half. Shape each half into a loaf.
Place in a loaf pan (9 x 5 x 3 inches), proofing basket, or on a board. Cover lightly with a towel and proof 4-24 hours. While a second proofing period is not required, if desired, punch dough down after 4-12 hours, reshape, and proof again.
Slice an X shape in the top of the loaf with a very sharp knife or razor blade to allow the loaf to expand during baking without splitting in unexpected places.
Bake at 400°F for 30-60 minutes, depending on loaf size, or until the internal temperature reaches 190° to 210°F. Use an instant-read thermometer inserted into the bottom or side of the loaf.
Cool before slicing.
