Extra-virgin olive oil (EVOO) is extracted mechanically from olives, without chemical solvents, and is generally bottled as-is, though it may also be filtered. “The term ‘extra,’” Profaci explains, “means it has superior flavor characteristics.” After extraction, virgin olive oils that don’t meet the desired flavor or appearance standards can be refined using heat and/or caustic soda, which is also used in municipal water treatment.

Refining removes the oil’s color and flavor, raises its smoke point, and “largely destroys naturally occurring micronutrients like phenolic compounds and antioxidants,” he adds. Because those compounds also give good olive oil much of its flavor and potential health benefits, producers may blend a small amount of virgin olive oil back in to restore some color, flavor, and antioxidants. Because it is made primarily from refined olive oil, light-tasting olive oil is generally less expensive than EVOO. When only a small amount is added back (Profaci offers 5% as one example), it may be sold as light-tasting olive oil.

The store will be open with adjusted hours on Friday, 9/11 of 1-6 pm. We will be open normal hours 10 am-6 pm on Saturday, 9/12.
