Hey Screaming Goat fans! ๐๐ We recently had a customer come in with concerns about our chicken wings being pink and not cooked. We totally understand the concernโyour safety and satisfaction are our top priorities! ๐ฏ
Here's the scoop: At The Screaming Goat, we use the sous vide method to prepare our wings. This technique involves cooking the wings at a precise, controlled temperature in a water bath, ensuring they are cooked thoroughly while retaining maximum moisture and flavor. After sous vide, we fry them to give you that perfect crispy finish. ๐ Sous vide wings are fully cooked in just over 2 hours. We however cook them between 3-4 hours, creating a more tender wing.
Now, let's dive into the science! ๐งช When chicken is cooked sous vide at a lower temperature (but still safe), it can sometimes retain a pink hue. This is completely normal and safe! The key is the internal temperature, which our sous vide method maintains perfectly to eliminate any harmful bacteria. The pink color is simply a sign of the juiciest, most tender wings you can get! ๐๐
