Not to stress you out, but we are less than 2 weeks from Easter!

Do you have a big family get together for the Easter holiday? Beef is a great option for your Easter ๐Ÿฐ meal ๐Ÿ˜‰

We have 1 whole tenderloin, 1 standing rib roast and lots of brisket in stock...come grab something to feed all of that family that will be coming over!

P.S. if you have a sous vide, eye round roast is a great economical option to feed a bunch of people too...we have a post about how to cook it so it is butter knife tender on our website!

Can we talk London broil for a minute?

It is definitely not one of the more popular cuts for most of our customers in the store, be we absolutely love it around our house. It takes a marinade really well (and the right marinade definitely helps make it a little more tender) and it can be super quick and easy to make.

I grabbed one out of the freezer this morning along with a few other cuts for later in the week (trying to be better about the pre-planning), and put it in a gallon ziploc bag with a jar of teriyaki marinade (sometimes I make sauces from scratch...but sometimes I use the pre-made stuff because it's easy, and it's good).

That all went in the fridge to sit all day. About 45 minutes before I was ready to start on dinner, I pulled it out to come to room temp. I Iiterally broil my London broil...oven on hi broil to preheat and then put a layer of foil on a baking sheet, and a cookie cooling rack on top (don't laugh, it's an easy way to keep the London broil off the pan). Put the beef cut on top and stick it under the broiler for about 5-7 minutes, pull it out and flip it over then back in for another 5-7. I absolutely recommend not cooking a London broil to more than medium rare if at all possible, it definitely makes a difference in tenderness.

Let it rest for for about 10 minutes, then slice against the grain and serve...even the littles asked for seconds.

It's been one of those weeks, anyone else??

It's been incredibly busy, and so pre-planning this week just hasn't happened, which means when I was trying to figure out what we were going to have for dinner the other morning, I had NOTHING thawed.

Thankfully, chuck roasts are pretty forgiving...I grabbed one out of the freezer and tossed it straight in our roasting pan, poured some vegetable cooking stock, worchestershire and a can of tomato sauce over top of it and sprinkled a generous amount of the Shenandoah Spice Company dry rub that we carry in the store on top and popped it in the oven at 250. (At about 7 a.m.)

I walked back in the house at 3 p.m. that afternoon and oh. my. goodness. It smelled incredible.

The roast was literally falling off the bone and so tender and flavorful. I keep several cans of veggies (corn, green beans, red beets) in the pantry for these types of weeks, so all I had to do was heat up some veggies to go with the roast and make some rice for the boys and dinner was served, easy as that.

We have plenty of chuck, bottom round and sirloin tip roasts in the store if you need your own quick and easy dinner, along with plenty of other options.

The peeper ๐Ÿธ have been at it all day and I actually turned on the AC in the house ๐Ÿ˜‚, so we grilled out tonight!

Burgers on the grill are a hit with our whole house, all four of us usually skip the bun (though they are good on the The Preppy Pretzel pretzel rolls), and more often than not we just do some fresh veggies on the side.

It has gone from rain to sleet to snow and looks like it will continue to snow for the next few hours as the temperature drops, so we are going to be closed today so everyone can stay safe and warm.

So we don't give our spices and seasonings as much love here as some of the other items in the store, which is totally my fault.

While I 100% believe a good piece of meat can be delicious with just some salt and pepper, I also LOVE a good spice mix or sauce. And yes, you can always make your own...but time (and pantry space) is limited around here, and when you have companies that make great mixes, why wouldn't you use them?

I have used Shenandoah Spice Company rubs for years personally (not because I grew up in Shenandoah County, but because they are good) and when we decided to open the store, I knew I wanted to carry them. I generally have no less than 7 or 8 different rubs in my pantry at any given time, and use them regularly. Yesterday, it was the carnita rub, mixed with a little brown sugar because I have littles that enjoy a little extra sweet with their spice, rubbed on a leg of lamb roast that I put in my Dutch oven with some vegetable stock and cooked at 250 for about 8 hours. The meat was falling off the bone tender and so delicious...I'd be lying if I said I wasn't looking forward to lamb tacos for lunch today using it!

The Poppi's Hot Sauce rubs and hot sauces that we carry are a new addition, but they are just as good! Both the Asian BBQ Seasoning and Chicken Seasoning have been popular here, and I'm excited to try some of the hot sauce once Mike is back home (the boys don't appreciate that as much :) )

We have lots of different seasoning options that go great with our meat, vegetables, and all sorts of other things...come check them out and grab some to try!

And soft pretzels and beef fit that around here!

It's Wed, which means fresh soft pretzels and rolls from The Preppy Pretzel in the store today! Come grab some and some beef (ground beef would be quick and easy to thaw for meat loaf, meatballs, burgers, tacos, etc.) today from 1-5!

There is nothing like fresh roasted, and ground, coffee, and the folks at LONE OAK Coffee Company definitely do it right...

There is nothing like fresh roasted, and ground, coffee, and the folks at LONE OAK Coffee Company definitely do it right!!

We absolutely love the coffee that we carry from them (we won't talk about how many cups a day I may drink). Most of what we have in the store is whole bean, which allows you to grind it right before brewing...but we also know that if you don't have a coffee grinder, that can be tough; so we are now stocking a couple of electric grinders for you if you like the idea of fresh coffee, but don't have the grinder (yet)!

Come grab some, and some eggs, for a perfect Saturday morning brunch!

Wednesdays are currently my little cowboys' favorite day, because that is pretzel day, and I'm usually enough of a softie to take one home for each of them.

Wednesdays are the only day you can get FRESH (as in came out of the oven and straight to the store) pretzels and pretzel rolls at the store, the other days we only have pretzel chips (assuming we don't run out). Come grab yours today (they go great with our beef for burgers or the cheese that we sell, or even our eggs for a breakfast sandwich!)

We don't do short ribs around here very often, but I was in the mood for something different when I got done with work for clients, errands and checking on a struggling baby calf this afternoon, so I pulled out a pack of short ribs I brought home from the store because the vacuum sealed busted.

As the oven preheated to 275 I combined an 8 oz can of tomato sauce, about 3 tablespoons of honey, 2 tablespoons of mustard, 1-2 tablespoons of apple cider vinegar, 2-3 tablespoons of worchestershire sauce, 1 tablespoon onion powder, 1 of garlic powder and probably 2 teaspoons of smoked paprika in my pampered chef Dutch oven. I covered the ribs with some of the dry rub we sell in the store and put them in the pan, then added just enough beef stock to cover 1/2-3/4 of the ribs, stuck the lid on and put it in the oven.

It went in about 2:45 or so this afternoon, and I pulled it out about 5:45 this evening after I picked up kids and made a few sides to go with the ribs.

Once I pulled the ribs and bones out of the broth (the meat was literally falling off the bone), I put the Dutch oven on the stove over medium heat to bring the broth back to a boil and added about a tablespoon of cornstarch dissolved in cold water to thicken the broth to a sauce.

If I'm being honest, it could have used a little heat - some chipotle powder would have been a great addition - but since most nights dinner is just the little cowboys and I, I toned it down a little bit.

Side note - I am not a pampered chef rep, but I absolutely love that Dutch oven, I can go from stove top to oven or vice-versa and it cleans up so well!

Okay y'all. I pulled a bone in chuck roast out of the freezer this morning (about 9 am) and stuck it straight into my roasting pan with some vegetable stock and apple cider vinegar, covered in our dry rub and put it in the oven at 275 (covered).

I honestly wasn't sure what to expect, I've done frozen roasts in a crockpot before, but never in the oven; but the bone in roast was too big to go in my crockpot so...

I got home from the store tonight and pulled the pan out and oh. my. goodness. Falling apart (and off the bone) tender, super moist, and the littlest cowboy claimed it was the best beef ever. Honestly, I think it would have made amazing beef tacos ๐ŸŒฎ too (which may be the fate of the leftovers).

It's birthday month around here; both of our little cowboys have birthdays in February, and so I've been doing A LOT of baking.

Between the cakes and cupcakes themselves and the "marshmallow" icing that the boys request this year, that means I have been using a ton of eggs.

I honestly think that the super fresh eggs from our ๐Ÿ” make a world of difference when baking. (Fun fact, the chickens are actually our little cowboys' "business" they *usually* take care of the chickens and earn $0.50 from every dozen we sell; the rest goes to cover their expenses like feed, shavings, oyster shells, etc.)

Side note - anyone else have kids (or other loved ones) with interesting tastes in cakes? The requests here this year were for homemade funfetti cupcakes with vanilla buttercream to share with their friends at school, a chocolate cake with marshmallow icing for our youngest and a vanilla poke cake with lemon curd filling and marshmallow icing for the oldest. And don't get me started on what decorations they wanted...

Vanilla buttercream is also super simple and always a favorite, I basically just follow the recipe on the domino sugar powdered sugar box and add a little extra vanilla extract. The trick is to not add too much milk so it doesn't get runny (add a VERY little bit of milk at at time as you are mixing).

If this isn't a perfect day to put a beef roast or stew beef in a slow cooker or on low in the oven for some warm comfor...

One of the neighbors was walking on the farm this evening and discovered this buck. Still alive. They tied a rope to it's antlers and pulled it to safety.
