rown up in the Midwest I was raised on comfort food and BBQ and the older I got the more curious I became about how really great BBQ was done. In my twenties I moved to south Mississippi and took a job that sent me travelling across the entire south, up the eastern seaboard into New England and then back across and down the Mississippi River, the places that great comfort food and BBQ come from. A lot of these places were nothing more than a family home where the family would sell extra plates of food just to make a few extra bucks! These were some of the best places I had ever eaten at in my entire life. So, at every stop I would ask what the ‘secret’ was to all of these fantastic dishes. Time and time again the answer to the ‘secret’ turned out to be very simple. Passion. .Passion and a wood fire. Well I never forgot about the ‘secret’ when I started cooking professionally or should I say, started doing dishes professionally at a few of the finest restaurants back here in the Midwest. Eventually I became a chef and now I’m taking my culinary experiences and coupling them with the ‘secret’ to create One Bad Pig BBQ.
