A couple weeks ago I talked about Building Under Fire, and it’s certainly been the case for us the past month….in that month, we’ve executed our two busiest weeks in 15 years of business, and that was no easy lift, for me, or our staff, and my hats off to them because we have asked alot….you all reading here played a role in that as well, as we’ve had to close the store twice now, just to keep up with commitments, and we appreciate your understanding and the way you just come right back in force the next day…but, building under fire isn’t just about handling the workload, and yesterday I had a great man-to-man mentoring session with Pastor Jeff Sciaretta, and I told him about some of the obstacles we ran in to over the past couple weeks, and how I was praying that it wasn’t bad decisions on my part, or misinformed stewardship direction, or something we did wrong….he re-assured me that the King does not attack His people when we pursue His will, or ever, but there is another who does…Jeff left it at that, right there, and I had my answer…when satan tries to derail us, stand strong…pray with humility, and keep marching forward into battle…yesterday, so many little miracles happened in rapid succession, I stayed up til midnight writing about it, and you’ll read those stories soon enough….Ephesians 6:11 – STAY STRAPPED.…😉

Lockin’ and Loadin’….getting the fleet dialed in for a busy weekend, 6 events in the next 5 days feeding about 1,600 folks…lots of moving parts – real china, glassware, cutlery, linens, napkins, drink stations, buffet lines, carving stations, and don’t forget the foods….brisket, tri tip, chicken breast, turkey breast, housemade sausage, rosemary pork loin, tomahawk ribeyes, red potatoes, green beans, mac and cheese, vinegar cole slaw, twice baked potatoes, potato salad, spring mix salads, strawberry spinach salads, jalapeno poppers, caprese skewers, empanadas, and the list goes on and on….friendly reminder we will be CLOSED on Saturday, it’s always a tough call to close the restaurant, but we’ve just got too much going on this weekend, and I sincerely apologize that we won’t be here to serve you….however, you can grab some great BBQ at 7 Bar in Rockdale with Braden Wallis, or in Austin at Two Goose BBQ on Lamar run by our good friend Aaron Aday…in Cameron go see Oscar at 1846 Grill for some great burgers and more….…😉

Good morning from the FLIGHT DECK….knocked out some fantastic events over the weekend, including this one at Memory Lane in Dripping Springs with our good friend Bobby Cavo…I manned the carving station, serving up PRIME RIB with our housemade steak sauce and horseradish cream, SMOKED SALMON with Beurre Blanc, Grilled Chicken Breast, Brussels Sprouts, Asparagus, Fresh-cut Green Beans Almondine, Rosemary Red Potatoes, and fresh baked sweet butter rolls….Christin finished the line with a beautiful dessert spread of Strawberry Shortcake, Southern Layered Banana Pudding, and Oreo Indulgence…we got another fully loaded week, it’s peak Fall Season with 7 weddings in the next 7 days….the bad news is, we are going to be CLOSED this coming Saturday as we’ve got another date with multiple huge events to get served, the good news is both the Aggies and Longhorns have away games and play early, which generally cuts way down on our Saturday traffic….we’ll make a few recommendations for your Saturday food needs, but make sure to pick up any items from the Butcher Counter on Friday…..thank the Lord for the rain, time for a little sunshine…..GIDDY UP…😉

Another beautiful sunrise this morning from the front porch….this view never gets old…FUN FACT: when we opened in 2011, TxDOT had the traffic count on Highway 79 through town at around 16,000 cars per day….15 years later, I’m guessing that has probably doubled, just by watching the video, and I don’t remember seeing nearly this many cars back then….DRIVE SAFE, folks….EAST BOUND AND DOWN..…😉

Heading back from the big city last week, we had to stop at Hobby Lobby at the Stone Hill Shopping Center in Pflugerville, because like any petulant child, I’ll throw a fit on the ride home if I don’t get to look at the model airplane section….ever since Toys ‘R Us went under, it’s been my go-to….coincidentally, they have a Raising Cane’s right there at the exit, which I couldn’t resist….some BBQ guys stop at all the BBQ joints they come cross but not me, I’m a fried chicken, pizza, or Tex-Mex fiend, and what I love about Raising Cane’s is their incredibly simple menu….chicken strips or chicken sandwich, kinda like the waitress from Hell or High Water – “what don’t you want?”….and with such a basic offering, they can knock it out of the park….the cole slaw is mayo-based which is the right call for most fried foods, perfectly fried chicken breast and fries, and a fast, friendly staff….HOO RAH.…😉

Last week looks to have been our highest grossing sales week in our 15 year history, with 4 weddings, two double-meal service corporate events, two Open Houses, numerous tastings, and a 600 ribeye order on Saturday….i don’t keep as close of tabs on sales and headcounts as I did when we were a smaller business, but all told, along with the restaurant, we served about 4,500 people….so we are certainly looking forward to 3 straight days with zero events on the docket, but rest assured they’ll be picking up again later this week….hat’s off to our staff, who worked the early, late, and in-between shifts to get everything done, and to our vendors at Scarmardo, Ben E. Keith, Xpress Distribution, CV Linens, and others, who always deliver even when we call them after hours….it takes a lot of people to pull off a week like that, including all the faithful customers who keep clamoring for more BBQ and keep the calendars full….we’ll keep it rolling, FULL BBQ LINEUP straight ahead at 1030am, every day but Sunday, bring on the rain…..AIRPOWER.…😉

Special thanks to Milam County 4-H youth for giving us this AWESOME plaque for the wall….we love supporting 4-H and Texas Agrilife Extension, because we grew up in 4-H Families, showing pigs, doing grass and plant ID, food shows, etc….my Mom worked for the Texas Agrilife Extension Service for 14 years…in fact, we’ve been honored to serve the last two Presidents of Texas A&M University, including General Mark Welsh and current President Susan Ballabina, who began her career in 1994 as a Texas Agrilife Extension Agent….we are grateful for making it through one of our busiest weeks on record, and we’ll be back to it Monday, the busy season is just getting into full swing…KEEP GROWING, AMEN…😉

Even in all the chaos we take time to celebrate, and last week we got to enjoy CAKE and PIZZA and even HOMEMADE CUPCAKES for Shannon’s birthday….you all know her well, she’s the one who usually greets everyone as soon as they step foot in the store….what you probably don’t know, she came in at 2am Wednesday to start filling igloos and load trucks, and headed up the breakfast portion of the big catering in Georgetown (full recap coming soon)…when you don’t see her up front, she’s lining people out in the back or whipping up sides, desserts, and anything else on the docket….that’s just what she does, and we are incredibly thankful for her and Lee and all they do for us….HAPPY BIRTHDAY SHANNON….we got a full throttle WEEKEND still rocking and rolling, our crews got back from a double header last night, heading out again for weddings today and tomorrow, and we’ll be stocked up for another FOOTBALL Saturday, with the Full BBQ Lineup today and tomorrow…catch us at the Hidden Vista Ranch OPEN HOUSE on Sunday afternoon if you’re looking for a local wedding venue option…..GIDDY UP…..;-)

Top of the Mornin’….we are back to regularly scheduled programming today, FULL BBQ LINEUP at 1030am….it felt like I got body-slammed by Macho Man Randy Savage last night after feeding 1,500 folks yesterday in Georgetown…..hats off to our crew for pulling off another stellar event that went as smooth as you can possibly imagine given the sheer volume we sent out the door…and I appreciate everyone who took the time to say thanks and offer compliments, we love serving but it’s even more special when we hear your glowing feedback….more pictures to come soon on that one, but we’re sending trucks right back out the door today and through the weekend….let me also thank the fine folks that serve Williamson County, from Judge Steve Snell and Sheriff Matt Lindemann, Commissioners Russ Boles (Pct 4) and Valerie Covey (Pct 3) who all came by to shake our hands, to Shelly, Kathy and Chris for organizing this massive event…and of course, we got to see tons of our regular customers coming through the line, we always love that part, and thanks for all you do to serve your fellow citizens…..finally, for the first time in my life I got to park in a VETERANS ONLY parking spot while unloading, right up front….WELL PLAYED, WILCO….AIRPOWER…..😉

From the FLIGHT DECK – it’s an ALL HANDS type of week as we gear up to feed 1,500 folks breakfast and lunch tomorrow, plus 4 weddings through the weekend, a 600-ribeye order, and two Open Houses….we always regret shortening our hours in-store, but in addition to closing Wednesday, we’re gonna knock off at 2pm after the lunch rush today so we can get a head start, work through the night, and BRING IT bright and early tomorrow….so get here by 2pm today, we’ll still have the FULL BBQ LINEUP at 1030am….while we’re at it, a big HOO RAH to all the mechanics and techs that keep our fleet ROLLING…..Brian at Woelfel Automotive, Will’s Garage, Tim Patin and the Hot Rod Garage, Richard Schneider at BS Tire, and of course, Randy’s Wrecker Service and Chris Pounders who always tow us home if we break down….doesn’t happen that often, but, KNOCK ON WOOD…..GIDDY UP….;-)
