Potato Dill Bread Mini Loaves
-4 C. Lehi Mills Turkey Brand Bread Flour ( #2285)
-1 T. SAF Instant Yeast ( #2446)
-1t. Salt
-3 T. Dilly Dill Dip Mix ( #1421)
-1 ½ C. Hot water 105*-115*
-1 C. Prepared Potato Pearls, room temperature or warm ( #4744)
-½ stick Kirkland Butter, melted ( #1723)
In the bowl of a stand mixer mix flour, instant yeast, salt and Dip Mix. In a separate bowl whisk together the hot water, melted butter, and mashed potatoes. Check the temperature of your liquid mixture, if it falls below 105 pop it in the microwave for a few seconds until it gets to the correct temperature. Using a dough hook on the stand up mixer slowly add the liquid to the flour mixture. This takes a while to incorporate and you may feel the need to add more water but don’t do it. Be patient and eventually all the flour will mix in and form a dough ball. Let the dough hook knead the dough for about 4 minutes. Remove the dough (will be slightly sticky) and place in a large bowl that has been sprayed with Vegalene Premium 3 oil blend cooking spray. Cover and let rise for 1-1 ½ hours. Turn the dough out onto a lightly floured surface. Separate into 4 equal portions. Roll each portion into a rectangle slightly larger than your mini loaf pans. Roll the dough lengthwise, pinch seams and ends, place in the loaf pan, cover with a towel, and let rise for 30-45 minutes. Brush with melted butter, (or an egg wash if you want a more golden crust) and bake at 350* for 25-30 minutes.
