🍇 Have you heard of whole-cluster fermentation?

Gottfried shared a little about this traditional w**emaking technique in this video — a method deeply rooted in the European w**emaking traditions passed down through his family for generations.

With four generations of w**emaking knowledge behind him, Gottfried understands that sometimes the best approach is to let the grapes speak for themselves.

In whole-cluster fermentation, the grapes are fermented with the stems and clusters intact, allowing those stems to contribute structure, texture, aroma, and complexity to the finished w**e.

It’s a traditional technique, but one that requires knowledge, experience, and a feel for the fruit to know when and how to use it.

For Gottfried, it’s more than a w**emaking method — it’s part of a tradition that began generations ago with his great-grandfather making w**e in Germany and continues today.
