Today I joined the Colorado Grain Chain Annual Update Webinar to learn more about Colorado’s local grain community and hear directly from farmers, millers, bakers, and other grain businesses.

I’m excited to continue exploring how my Colorado Wheat Project can connect local farmers with home bakers through practical culinary education.

I came to learn about wheat.I left inspired by a family.

The Poss family has been farming this Colorado land for four generations, and now their seven children are growing up surrounded by wheat fields, flour, and fresh bread.

One moment made me smile.I asked one of the boys, about ten years old, which wheat he liked best for bread.

Without hesitation, he answered:”The one with higher gluten.”👍

I think the future of farming is in very good hands.

Some habits never leave you.

The first thing I did was pick a wheat head and rub it between my hands.

Four years ago, I left the wheat fields of Ukraine.

This week, I stood in one again—this time in Colorado.

Thank you, Laura and Kevin Poss from Grainsfromtheplains, for inviting me to your Harvest Festival and for welcoming us so warmly.

As a chef, I spend a lot of time talking about flour and bread. But every loaf starts here—with the farmers who grow the grain.

I’m excited to learn more about Colorado wheat, bake with it, and share that journey with my students.

I have a feeling this is just the beginning.

I’m excited to have completed Level 1 of the Toastmasters Presentation Mastery Path.

Every presentation, cooking class, and workshop is an opportunity to become a clearer communicator and a better instructor. I’m looking forward to bringing these skills into every class I teach.

As someone from Ukraine, the word independence carries a deeply personal meaning. It reminds me never to take freedom for granted.

Today, I’m grateful to the country that became my second home—a place where I can do what I love: bring people together through food, share stories, and create connections around the table.

Every year in my Easter classes, we don’t just cook—we slow down and experience traditions.

This time, I tried natural dyes for our eggs, and I honestly loved how simple and calm the process felt.

As a chef, I pay attention to ingredients—even in small details like this. These colors come from plant-based sources, and the result is soft, natural, and very elegant.

As a mom, I appreciate when something is easy and doesn’t feel overwhelming.

And as someone who teaches Ukrainian traditions… it felt meaningful to share this approach.

Not perfect. Not overly bright.
But real—and somehow, more connected

Today I visited Poudre Library to prepare for our upcoming Ukrainian Easter program — and I can already imagine this room filled with people, stories, and the aroma of fresh p***a.

There’s something special about these quiet moments before an event…
when everything is still, but full of anticipation.

🍺🔥 Beer. Food. Energy.

At Maxline Brewing we explored craft beer in three ways — as a beverage, as a cooking ingredient, and as a true pairing partner.

Golden schnitzel, smoky rye canapés, warm apple strudel… all matched with beautiful local brews.

Great beer. Delicious German flavors. And a CSU group that brought incredible energy to the kitchen.

This is what happens when learning meets flavor. Prost! 🍻
