Erika Hall got me a cookbook for Christmas and so I’m putting together a few recipes before going back to work Tuesday . First up is Mango-Plantain Habanero. Should be ready in 2-3 weeks. When I made homemade applesauce last weekend I put the peels in a jar with water to cover and 1tbsp of sugar for each cup of water. Hopefully we will have apple cider vinegar in a few more weeks. I use it often and making it myself from scraps will be a great way to save a little money.

What do you do when Debbie Fellows Miller gives you tomatoes, chilies in your garden are ready to be picked, and nectarines are on sale? You make salsa!

Dice small:
2-3 cups diced tomatoes
1/2 red onion
3/4 of a yellow pepper
2 nectarines
3 hot peppers
3 cloves garlic

Add:
1/2 Tbsp onion powder
1 heaping tsp garlic powder
1/2 Tbsp ground coriander
1/2 Tbsp ground cumin
1/2 Tbsp ancho chili powder
1/2 Tbsp Oregano
1 tsp thyme
1 tsp cayenne pepper
1 tsp red pepper flakes
Salt and ground black pepper to taste
1 Tbsp honey
Mix well, let it set for at least a few hours before serving to let flavors blend.

I’m sorry for the time lapse. We were very busy this fall making homemade wine. I am back to cooking now that the craziness of preparing for the holidays are over and I want to share this delicious recipe that used up some of our leftover ham.

Spicy Sweet Ham and Squash Bowl

I diced one honeynut squash small, put it in a baking dish, drizzled it with 1 tsp orange flavored oil blended with 2 tsp olive oil. Sprinkled it with ground black pepper and some Himalayan sea salt. I put it in a preheated 375degree oven while I chopped the rest of the veggies, fruit, and ham. I used three small celery stalks, 1 honeycrisp apple, 1 cup of diced ham. I added about 1/2 cup of golden raisins.
When the squash was fork tender (after about 20 minutes, I brought it out of the oven and added the rest. I meant to add some green onions but forgot those.
I roasted them all together for about 10 minutes at 350 degrees while I prepared the sauce.
For the sauce I started with 1/3 cup of honey to which I added 2 Tbsp tarragon vinegar, 2 tsp ginger paste, 1/4 tsp cumin, 1/4 tsp Garam masala, 1/2 tsp sambal oelek. I pulled the pan out of the oven, poured the sauce over the diced mixture and added about 1/2 cup of bourbon soaked cherries (completely optional, I just happened to have some I wanted to use).
I put the pan back in the oven for about 10 minutes while I made some quick rice.

I had a zucchini that I needed to use so put together this simple dish with layer of thin sliced zucchini, a sliced Roma tomato, and a blend of shredded Italian cheeses like Asiago, Parmesan and Romano. I sprinkled Italian seasoning, red wine sea salt, and crushed rosemary in between the layers. I baked it at 400 degrees for 15 minutes.
Paired with some garlic bread it was a perfect late dinner.
If you make this don’t forget sprinkle the zucchini and tomatoes with salt and let them sweat a little and pat them dry before putting it together. Mine was a little bit too wet, still delicious though.

Tonight I spent an hour making candied ginger with ginger root from our garden. It’s really a very easy process. We used organic ginger root from the store which we cut into pieces, making sure that each piece had a little nub (like an eye on a potato) then we stuck them in a shallow pot with potting soil and watered them regularly. It took several weeks to get these two stalks but tonight (4 months later) I was able to gently dig down beside them and break off a piece as large as the one we started with. I sliced it thin and carefully cut off the skin with a paring knife. I simmered the slices in water with a pinch of salt until they were tender. I drained the water into a bowl. I put about 1/3 cup of the water back in the pan with the ginger and added 1/3 cup of sugar and a little honey to simmer again. While it simmered I drank the leftover ginger water with a little lemon juice and honey. Mmmm. After the liquid in the pan was reduced by about half I very carefully used a fork to remove each slice separately and laid them out on parchment paper to dry. When they were no longer wet but still sticky, I put 5-7 slices at a time in a dish with about 1 and 1/2 cups of sugar and gently tossed with a fork. I removed them from the sugar and laid them on a new piece of parchment paper to finish drying overnight in the cold oven. I poured the syrup into a jar for cooking or making more tea, lemonade or cocktails. The sugar I will save and use again for our next harvest. Eventually, I will bake gingerbread or cookies with it.
The stalks and a chunk of the root are still in the pot and hopefully I will have another good sized piece before Christmas.

A simple flavor boost for popcorn. Melt 3 Tbsp butter, season to taste with salt and fresh ground pepper, add 1tsp chipotle garlic seasoning, stir and drizzle over popcorn mix and enjoy! I apologize for no picture, we are it too fast.

Healthy Chocolate Pudding
I saw a comment on FB the other day about ways to use avacados. He said mix them with blueberries and cocoa powder to make a chocolate pudding. So this is the recipe I’ve been playing with, it’s surprisingly good and smooth. I mashed two avocados and added about 1/2 cup of blueberries and blended them with my immersion blender. Then I added 3 heaping Tbsp of cocoa powder, 1/2 Tbsp vanilla, 2 Tbsp honey, a dash of cinnamon and because I love my chocolate with a little heat a dash of cayenne pepper. Blend it well let it sit overnight in the fridge and enjoy. Occasionally I also add a Tbsp of red wine. Delicious and healthy.
