This is our eighth year working with Fernando 'Nando' Diaz of FINCA SANTA ANA, a longtime partner of our sister company, Bird Rock Coffee Roasters. It’s also the sixth year we’ve had the pleasure of featuring Nando’s Pineapple Process! 🍍

This experimental process begins by fermenting about 70 fresh pineapples for 48 hours to build a colony of wild yeast and bacteria. That’s right, 70 pineapples! The coffee and fruit ferment together for a further 48 hours before the coffee is washed. In turn, the pineapple accentuates the sweetness and acidity of the Caturra and Bourbon varietals.

This year’s harvest featured aromas of candied almond, apricot, and red apple, with notes of apricot, black tea and rosehip in the cup. Marmalade acidity provides a juicy body that's balanced by milk chocolate sweetness. Black tea lingers through the finish, joined by a touch of apple cider.

Now roasting: La Bandera Red Honey Gesha. 🍯 This standout lot marks the debut of our newest Direct Trade relationship. Diego Hidalgo's La Bandera micromill serves his family's three farms in the Los Santos region of Tarrazú, Costa Rica, where they grow Gesha, Starmaya, Typica, Catuaí, and Yellow Bourbon up to 1,975 masl.

This Gesha shows off its meticulous Red Honey processing with tropical fruit notes and a beautifully juicy body. Expect hibiscus, guava, and vanilla bean, a hint of bubble gum in the aroma, and crisp grilled lemon acidity.

We look forward to a fruitful relationship with Diego and his family in the years to come! Thanks to Café Brumas Del Zurquí for the introduction.

Every spring, we look forward to participating in Cafe Imports – a coffee swap amongst roasters that has been bringing the roasting community together since 2021 ☕️

Now, it’s finally time! This year’s exchange connected us with our friends at The Westside Coffee Company and their Sumatra Pantan Musara. A medium roast, this washed single-origin was a real treat with rich notes of caramel, malted chocolate, and spices. Thanks for the great coffee, friends!
