Pasta has a history almost as layered as lasagna. It wasn’t simply “invented” in one place at one moment, and despite the story many of us grew up hearing, Marco Polo wasn’t the guy who brought pasta to Italy.
Its history stretches across cultures and centuries—from ancient noodles and Roman doughs to Arab influence in Sicily, regional Italian traditions, and eventually the pasta and sauces we recognize today.
And that might be one of our favorite things about pasta: it has always evolved.
Today, we get to be one small part of that very long story, making artisanal pasta by hand and putting our own spin on tradition with flavors like spinach, mushroom, lemon pepper, and Calabrian chili to name a few.
A lot has changed over a few thousand years. But gathering around a really good bowl of pasta? We think that part is worth keeping.
