Had the privilege of taking a private cooking class in Escoffiers kitchen at the Ritz Paris from a Disciple of Escoffier. We made seabass tartare, filet mignon and Au jus with mushroom deuxelle, peas and barley risotto. Escoffier is to cooking like Henry ford is to cars.
