Our Dutch-style mussels are bottom cultivated using a harvesting method that's been refined over generations. Aboard the Stewardship, our custom-built box drag allows us to harvest mussels efficiently while avoiding contact with the seabed.

At Hollander & de Koning, we don’t rush the process, and we don’t over-harvest.

When orders come in, we head out on the water and carefully bring in mussels fresh from our beds in Maine. That means what you get is truly fresh - just harvested, just handled, and just out of the sea.

Our mussels grow for about 2½ years in cold, clean waters before they’re ready, and we only take what’s needed when it’s needed.

It’s a simple approach: fresh orders, careful harvesting, and mussels you can taste the difference in. 🦪💙

Our history with mussel farming runs deep.

We’ve been working in shellfish for six generations, learning the water, the tides, and what it takes to grow something truly good from the sea.

Today, we continue that work here in Maine, farming mussels in cold, clean waters using sustainable, low-impact methods that respect both the ocean and the product.

Our mussels grow for about 2½ years before they reach market size—slowly developing their flavor in the natural flow of Mount Desert Island.

For us, it’s simple: we’re carrying forward a family tradition built on patience, care, and respect for the water we depend on every day. 🦪💙

They featured our mussels in a bold, vibrant preparation with preserved lemon, garlic, Calabrian harissa, pineapple-citrus agua, pea shoots from Hawthorne Valley Farm, and a charred lemon. 🍋🔥

A perfect reminder of how versatile and expressive great ingredients can be.

At Hollander & de Koning, our mussels grow for about 2½ years in the cold Maine waters before they’re ready for harvest.

When the time comes, our shallow-draft vessel The Stewardship heads out and gently lifts them from the bottom using a custom box drag—carefully designed to harvest without disturbing the seabed.

Once onboard, they’re washed, sorted, de-bearded, and purged of sand so they’re clean and ready to enjoy.

We’re proud Maine shellfish farmers, and we keep it simple: sustainable methods, careful harvesting, and great mussels. 🌊💙
