Allow me to introduce you to your next new obsession: homemade hot fudge.

6 Tablespoons sugar
4 oz of semisweet chocolate chips
1/4 cup corn syrup or honey
3 tablespoons of Dutch process cocoa powder
1/2 cup whipping cream
2 Tablespoons salted butter
1 teaspoon vanilla

Mix everything but the butter and vanilla in the pan and bring to a boil over medium heat for 3 minutes, whisking frequently. Pull off heat and whisk in the butter and vanilla. Feel satisfied knowing you make good decisions in life.

PSA from your vanilla lady: One bean + a few months ≠ rich homemade vanilla extract. Real extract takes both bean quantity and time.

Yesterday was Try Something New Tuesday for my kiddo and me, and I found myself continuing the theme even after she went to bed. They say necessity is the mother of invention and when my corn syrup got too low, I decided to sub honey in my vanilla paste, which is something I've wanted to try for a while. The result? MY GOODNESS. I highly suggest snagging some of this before it's gone.

Also please note that this stuff was warm when I took it out of the blender. It did thicken up even more after it cooled. (And I had it in my yogurt this morning--YUM!) , ,

It’s night time and I’m thinking about breakfast for tomorrow already. I need something healthy, that I’ll feel good about giving to my girl after a holiday season filled with junk. Solution? Vanilla maple chia pudding!

1/2 cup chia seeds
2 cups milk
Maple syrup to taste
1 Tablespoon vanilla paste

Combine in a quart jar and shake. Refrigerate! After 5 minutes (or 15, I’m not judging you) come back and give it another shake to help disperse those seeds and keep them from clumping. Stirring works too, if you’re up for dirtying a spoon. Refrigerate until morning and enjoy!
