🌈 Tropical Rainbow Wave Cocktail
A vibrant frozen tropical cocktail with mango, kiwi, dragon fruit, and vodka, layered into a colorful beach-style slush.
🍹 Ingredients — Makes 2 Large Drinks
4 oz (120 ml) vodka
2 cups ice, divided
1 cup frozen mango chunks
2 kiwis, peeled and chopped
1 cup frozen dragon fruit
½ cup frozen blueberries
¾ cup pineapple juice, divided
½ cup coconut water
1–2 tbsp simple syrup or honey, optional
1 tbsp fresh lime juice
Blue curaçao or blue non-alcoholic syrup, optional for the bright blue layer
🥭 How to Make It
Mango layer: Blend frozen mango, 1 oz vodka, ¼ cup pineapple juice, and about ½ cup ice until thick and spoonable.
Kiwi layer: Blend kiwi, 1 oz vodka, ¼ cup coconut water, and ½ cup ice. Add a little honey if your kiwi is tart.
Dragon fruit layer: Blend dragon fruit, 1 oz vodka, ¼ cup pineapple juice, and a handful of ice until smooth and intensely pink.
Blue-purple layer: Blend blueberries, remaining 1 oz vodka, remaining coconut water, lime juice, ice, and a small splash of blue curaçao if desired.
🌊 Create the Rainbow
Spoon the frozen mixtures into two tall cups one layer at a time, alternating the colors. Keep each mixture very thick so the layers stay separated.
Pile an extra scoop of frozen slush on top, add a wide straw, and serve immediately.
Tip: Freeze the cups for 10–15 minutes before assembling. It helps keep those dramatic rainbow layers sharp.
Mocktail version: Skip the vodka and blue curaçao; use extra coconut water and blue raspberry syrup instead.
