As it has been hunting season, it’s time to think of some delicious recipes. We pulled out one of Bee Jays recipes that will pair great with our red wine!
This recipe is for a venison marinade but can go with other meats too!

17th century venison marinade
Ingredients
1 large mild onion, 2 tbsp green onion, 2 large carrots, 5 tbsp butter
4 cloves, 1/2 tsp thyme, 1/2 tsp marjoram, 1/2 tsp tarragon, 1/2 tsp basil, 1/2 tsp rosemary
1 cup red wine
Olive oil, Pepper, Salt
Directions
Fry out 1 large chopped mild onion, 2 tbsp of chopped little green onion, 2 large chopped carrots in 5 tbsp of butter. Add 4 cloves, 1/2 tsp thyme, 1/2 tsp marjoram, 1/2 tsp tarragon, 1/2 tsp basil, and 1/2 tsp rosemary. Add 1 cup of red wine.
Then put everything through a coarse sieve.
Brush the venison (or other meat) with olive oil, dust with plenty of freshly ground pepper and salt. Pour marinade over the venison. Let it soak for 8 hours.
Don’t forget to enjoy it with wine!
