Recipe 1: Sausage Broccoli Pasta
Ingredients: Italian chicken sausage (removed from casing), baby broccoli, short grain pasta of choice, chicken broth, aglio e olio seasoning, butter, grated parmesan cheese.
Instructions: In a pan over medium heat, crumble the chicken sausage and cook until browned. Add chopped baby broccoli, cover and steam for 2-3 minutes. Deglaze the pan with chicken broth, then add 1 1/2 cups of broth, 1 tbsp of the seasoning and salt and pepper. Simmer for a few minutes to reduce the sauce and finish cooking the broccoli. Add the cooked pasta, butter and parm to the pan and toss to coat the pasta in the sauce.

Recipe 2: Soyaki chicken, noodles and broccoli
Ingredients: Chicken thighs, Soyaki sauce, Squiggly noodles, frozen broccoli.
Instructions: Marinate chicken in soyaki seasoning. Bake at 425°F for 25 minutes or sear in a pan over medium heat for 5-6 minutes each side. Cook the noodles according to package instructions and microwave the broccoli for 4 minutes.

Recipe 3: Dim Sum at home
Ingredients: Pork & Ginger Soup Dumplings, Pork Shu Mai, Chicken Gyoza Potstickers, Garlic Shiitake Green Beans
Instructions: Microwave soup dumplings, shu mai and greens beans. Pan fry gyoza according to package instructions.

Recipe 4: Chicken Shawarma Wraps
Ingredients: Shawarma Chicken Thighs, Lavash Flatbread, Garlic Spread, chopped lettuce, tomatoes, red onion, potatoes, za’atar seasoning
Instructions: Grill shawarma over medium heat to an internal temperature of 165°F. Once cooled slightly, thinly slice chicken. Warm lavash wrap, spread on some garlic spread, top with chicken, lettuce, diced tomatoes and minced red onion. For the fries: Cut potatoes into fries, toss in some oil and za’atar seasoning and air fry at 400°F for 12-15 minutes, tossing a few times.

What I made for Fun in May ✨ Lately I’ve been doing a lot of cooking just for fun and not to film and I’ve been enjoying it + not having to measure anything is my truly favorite way to cook. Here are some of the meals I made this past month to hopefully give you some dinner inspiration:

📸1: Asian Salmon Rice Bowls: this is an older recipe of mine that can be found on my site. This time I made a carrot salad similar to the quick pickled cucumbers.

I love bowl meals because the possibilities are endless, they are easy to throw together and each person can customize their bowl exactly how they like it. The leftovers make for great lunches too! On a roll with the bowls! These Southwest Chicken Bowls are loaded with flavor!! Southwest chicken, crispy sweet potato, simmered black beans, fajita style peppers and onions and more. These bowls are perfect for dinner or meal prep and are super customizable.

Chicken
2 chicken breasts, cubed
2 tbsp avocado oil
1 lime juiced
2 tbsp Southwest seasoning, store bought or homemade

Sweet Potatoes
1 1/2 lbs sweet potatoes, 1/2 inch dice
1 tbsp avocado oil
1 1/2 tbsp Southwest seasoning

Black beans
1 1/2 cans black beans with liquid
2 cloves garlic minced
1/4 cup minced yellow onion
1 tsp cumin
3/4 tsp chili powder
3/4 tsp smoked paprika

Peppers and Onions
1 red bell pepper, ribs and seeds removed, sliced
1 green bell pepper, ribs and seeds removed, sliced
1 yellow onion, sliced

For Assembly
4 cups lettuce
1 cup corn
1 avocado sliced
cilantro
lime wedges

1. Chicken: In a mixing bowl, combine chicken, oil, lime juice Southwest seasoning. Toss so all of the chicken is coated in the seasoning. Cover chicken and refrigerate while you prepare other bowl items. In a large frying pan, heat avocado oil over medium heat. Add chicken in a single layer and cook for 4-5 minutes on one side. Flip chicken and cook an additional 3-4 minutes, or until inside of chicken is no longer pink.
2. Assembly: Start with lettuce as the base of the bowl. Top with cooked chicken, roasted sweet potatoes, fajita peppers and onions, simmered black beans, corn and avocado. Garnish bowls with fresh cilantro and lime wedges.

This Beet and Goat Cheese Dip is as delicious as it is colorful! Dunk, dip and scoop toast, pita or vegetables into this creamy & tangy dip. The best appetizer for Spring time!

Ingredients
8 oz beets about 1 small beet
8 oz goat cheese
1 tbsp olive oil
1 1/2 tbsp honey
1 tbsp lemon juice
1/2 clove garlic
1/2 tsp salt
1/4 tsp black pepper

For Garnish
2 tbsp pistachios
parsley
lemon zest

Instructions
Peel and chop beet into chunks. Place beets on a piece of parchment paper, drizzle with olive oil and season with salt. Wrap beets up in parchment paper, then wrap parchment paper in aluminum foil.
Roast beets at 375°F for 1 hour, or until beets are soft and fork tender. Allow the beets to cool completely.
In a large food processor, add roasted beets, goat cheese, honey, olive oil, lemon juice, garlic and salt. Blend for 30 seconds, then stop to scrape down the sides of the food processor. Return the lid and blend for another 30 seconds to one minute, or until mixture is smooth. Taste and adjust honey, lemon juice and salt according to personal preference.
Pour dip into a serving bowl and top with toasted pistachios, lemon zest and fresh parsley. Serve with toast points, pita and/or veggies for dipping.
