Tryon Mountain Farms A sustainable family farm making simple syrups and seasoning salts with the ingredients we grow. Today in 2022 our farm business is truly in full swing.

Tryon Mountain Farms is located in the Thermal Belt Region of Western North Carolina. Known for its moderate climate and natural beauty, the area became known for tourism, equestrian sports, mountain crafts and grapes at the turn of the last century. While my family has lived in Polk County for over 150 years, my parents moved to our 15 acre farm over 50 years ago with the goal to practice organic

farming while raising their children. In 2015, my husband and I decided to come back to the farm and create a farm based business. When you have 50+ years of Organically Farmed Land...it must to be nurtured and perpetuated! We produce a line of "seed to bottle" Simple Syrups, Salt Blends and Herb Blends utilizing ingredients which we can grow on our farm in North Carolina. This tenet makes our products truly unique. Our Simple Syrups currently include five different varieties, some available year round and some seasonal: Lavender Hibiscus Simple Syrup, Fig Simple Syrup, Spicy Hibiscus Simple Syrup, Kudzu Blossom Simple Syrup and Blueberry Prickly Pear Simple Syrup. Simple Syrups can be used as mocktail or cocktail mixers, flavorings for tea and coffee, for homemade sodas, as marinade ingredients and for baking. Our Salt Blends incorporate New Zealand Solar Salt as Tracy, my husband, is from New Zealand. We then blend our farm herbs to create balanced mixes that flavor both meats and veg. Our varities include: Hibiscus Chili Garlic Salt, Beer Thyme Salt, Rosemary Red Wine Salt, Lavender White Wine Salt, Lemony Garlic Scape Salt and Flower Power Salt. Our salts are all packaged in grinder jars so the balanced mix of salt and spices is ground freshly everytime it is used. Our seasonal Herb Blends include Greek Oregano Dipping Mix, Herbes de Tryon and Gold Dust Farm Mix. These small batch herb and vegetable blends add flavor to any meal or appetizer. Lavender -ing today!

Both lavender and elderflower are budding and blooming on the farm. I typically leave our elderflower blooms for berries; however, it is a always a hard fought battle between me and the birds to harvest.

This week, I have a little leeway to experiment between harvests. Going to give elderflower lemon balm simple syrup a try. Persimmon feijoa simple syrup in the test stage, too. Taste testing time!

Last Saturday's rainy "comfort" breakfast to make a cancelled market morning feel better. Seasonal garlic scapes with grits from our fellow vendor friends . All seasoned with a grind of our Lemony Garlic Scape Salt! The weather forcast for this Saturday's market is looking good!

FINALLY!! Thyme harvest is here. BEER THYME SALT is back!

Yesterday, I harvested and dried thyme and made beer salt. Today, I stripped the tiny thyme leaves from the stems. Tomorrow, we are outside garlic scape harvesting so Thursday, Tracy will be inside putting together jars of salt, garlic and thyme!

This weekend come see us Saturday at in Greenville and Sunday in Charlotte at . Beer Thyme will be back in our online store Thursday afternoon.

Sunday is the so today's post includes a julep made with our Lime Basil Lemongrass Simple Syrup and the Tryon Horse, our town's mascot!

Tomorrow begins our 2026 Market Season at in Greenville, SC. We are excited to be back for our 8th year! Look for us in our regular spot at the top end of the Market.

If you want to find us at Markets this season this is our regular Saturday location. We will have a lighter presence at Charlotte Markets this season; however, we will update online when we head that way!

I guess I am impatient for Mojito season! So...I followed Kiri Cat's suggestion and whipped up a "Meowito" with her fresh Catnip, Rum, Lime Basil Lemongrass Simple Syrup, Lime and Sparkling Water.

Personally, the flavor was a little earthy, but I liked it. Before I post anything; however, I always get Tracy's opinion. And there you have it. We won't be raiding Kiri's catnip patch for "Meowitos" anymore...

Our only April Market is this Saturday with at their new location at . 100 vendors! It will be a great day!
