So I never quite understood what the hype was about Aldi but I’ve also never lived near one before. I’ve been misbehaving with the budget lately. Stopped to pick up some things for the next week. Well, I will be ballin on a budget. The crappy panda I got at DoorDash last night at work is half of this.

I’m actually impressed. Now let’s see what I can come up with.

Next episode is an easy fideo, it also can be placed in three different categories, depending on how thick or thin you make the broth. Today is the Mexican spaghetti version where the broth is pretty thick. I truly enjoy all of the versions of this dish. It’s essentially the same dish however much water you want in it and whatever texture you want..

I made some burgers/ slider style because I have some Hawaiian pretzel buns and pimento cheese. I’m planning to turn that into something.

The rest of the beef has been turned into meatballs and a small meatloaf. I have a feeling this is gonna turn into many meals in the future, at least three or four. I got spaghetti and the Italian wedding soup are in the thoughts.

Starting with a Mexican rice made from all the leftover rice I’ve had in my journey. We’ll see how it comes out with the texture. But my method is always toasted first. I have yet to go into the washing method. I’m pretty sure those will be different outcomes.

I used only a pound and a half of ground beef. I’m working on not trying to cook for an entire family anymore.

I made calabasitas last week so I really don’t want to repeat that.

I’ve learned so far it’s amazing how much you can stretch one vegetable or one ear of corn, etc. if you really have the intention

So my work shift has just been shifted. Heading into the night time lifestyle. To give myself time to adjust. I’ve decided to pull everything out of my cabinets. I know you think there wouldn’t be much cause I’ve only been here a month but I’m a bit of a food hoarder.. so I am prep cooking for things that either I can freeze or that would at least last in the fridge for the next few days to give me wonderful home-cooked meals and avoid DoorDash at all cost.
Here’s a couple of pictures of what I have started with.  First a green chili picadillo. Green chili potatoes and ground beef come together with onions and so many other spices that give it the wow. Can be served as a burrito or as a stew.
Definitely Texas home comfort.

And the other is a beef Cocido. Just a traditional beef and vegetable soup, meant to be hardy in the way that everything is kept larger and intact versus making a heavier broth. You get a nice consume with all of the beautiful flavors and you are still allowed to chew your food. Ever so slightly under seasoned on purpose to be simple.

I haven’t done anything with the cheese yet, but it looked amazing so we will see what’s in store. I think it would look beautiful on some type of charcuterie something
