Chunky Monkey Croissant!🥐🍌🍫😍

If you’re a chocolate lover then you have to try this Chunky Monkey Croissant! It’s gooey, it melts in your mouth and it’s absolutely delicious! I made it using my favorite Hukitchen Grass-fed Almond Crunch + Coconut Flakes Milk Chocolate. If you watch my stories, you’ll know I’m obsessed with their Milk Chocolate line, as all of the flavors are ridiculously good!

Hu Organic Grass-Fed Milk Chocolate Bars are USDA Certified and made with no weird ingredients. Ever! They’re made with organic unrefined coconut sugar, and some flavors are even stuffed with nut butter. A MUST TRY!!❤️‍🔥

Ingredients:
Crescent Roll, 4 triangles
2 bananas
1 bar of hukitchen Milk Chocolate Bar
1 egg, whisked
Directions:
Preheat oven to 350F. Cut each hukitchen chocolate square in half. Peel the banana, gently scoop out the center using a spoon and stuff it with Hu chocolate chunks. Unwrap the crescent dough and roll it out until thin. ( Check out video for reference). Wrap the dough around the banana. Brush whisked egg over crescent roll and bake for 16-18 minutes or until golden brown. Melt the remaining chocolate in the microwave for 1 minute. Drizzle on top of the croissant and enjoy!

Here’s an easy and kid-friendly camp snack recipe idea that you can pack into a lunch box for kids attending day camps! My girls absolutely love this snack, and it requires just a few simple ingredients, making it super easy to make. ad
I used athens_foods phyllo shells, and it was a success! These shells are incredibly convenient since they’re fully baked and delicious. You have the freedom to add hot, cold, or room temperature filling.

ingredients:
athens_foods phyllo dough shells
Organic Sun butter
Fresh berries of your choice
Chocolate chips
H**p seeds
Directions:
Preheat your oven or toaster oven to 350°F. I recommend crisping up the shells before filling for the best texture.
Take the shells out of the packaging and place them on a baking tray. Bake them for 3-5 minutes.
Spoon some sunflower butter into each phyllo shell, then add berries, chocolate chips, and h**p seeds.
Pack them up for a camp snack or enjoy them immediately, just like my daughter Safiya did! I also packed fresh bell pepper, Turkey meat sticks and extra berries for her.
I hope you and your kids enjoy this delightful camp snack!🙌❤

Cottage Cheese-Stuffed Baked Apples😍😍😍
With raisins, honey, and sliced almonds. 🔥 This is such a good snack or dessert packed with protein and nutrients! I’m using Good Culture cottage cheese in this recipe - it has been my #1 choice for a cottage cheese brand for what seems like ages, and for a good reason—it’s truly the best! It’s organic, filled with probiotics and packed with protein, tastes delicious, it’s thick and creamy and made with simple ingredients! I’ve made tens of different recipes using it, and I’m so excited to share this one with you! It is also inspired by my mom who used to make something very similar for us as kids.

Ingredients:
2 apples
1 c good_culture cottage cheese
1 tsp cinnamon
1 tbsp honey
1 egg yolk
2 tbsp sliced almonds or walnuts
2-3 tbsp raisins

Cut apples in half. Remove stems and seeds and carefully scoop out center of the apple, using a spoon. Finely chop the scooped out center and set it aside. Preheat the oven to 350F.

In a bowl, add good_culture cottage cheese, raisins, honey, chopped apple, and egg yolk, and mix well. Line a baking dish with parchment paper and spray with avocado oil. Add the cottage cheese mixture to the carved apples and place them on the baking dish. I like to fill them generously over the top. Bake for 20-25 minutes. Remove apples from the oven and sprinkle with sliced almonds. Drizzle with extra honey and enjoy!

Hawaiian-Inspired Peach Salsa Fish Tacos🍑🌮
I’ve had some of the freshest tacos last week in Hawaii, and I’ve been wanting to make some upon coming home. These tacos are bursting with summer flavors and they’re super quick and easy to make! Such a great dinner option that doesn’t take too much time and doesn’t require too many ingredients. You can use any white fish available; I love Mahi-Mahi or flounder for tacos. This salsa is so versatile - you can use it on chicken, salmon, and shrimp.

Ingredients:
- 1 1/2 lbs white fish, I used Flounder
- 1 cup cilantro, chopped
- 1 tomato, chopped
- 1 1/2 peaches, chopped
- 1/2 red onion, chopped
- Juice of 1 whole lime
- Olive oil
- Salt + pepper
- Tortillas of choice

Directions:
1. Prepare the salsa: Scoop out the seed from the peach using a knife. Chop peach, tomato, red onion, cilantro, and add to a bowl. Squeeze lime juice and add salt and pepper.
2. Prepare the fish: Remove the skin from the fish fillet. Cut the fish into cubes or strips. Add fish to a bowl and toss with olive oil, salt, and pepper until well-coated.
3. Cook in a skillet coated with olive oil, tossing around for 5-6 minutes or until ready. You don’t need too long as the pieces are small and white fish cooks fast.
4. Warm up your tortillas over an open flame.
5. Fill with fish and peach salsa. ENJOY!
