32 carts. That’s how many carts it would take us to load in The Bayou for a week long residency pop up inside Mother Road Market. As you can imagine it is NO small feat to set up shop as a pop up. Especially not with the bayou menu.

For four years we loaded in and out of that market. And don’t get us wrong, we are deeply appreciative of the platform they have allowed us to debut and test out FIVE different food concepts. One being our successful, award winning food truck business. One leading to our first ever brick and mortar restaurant Ruby D’s Burger Joint. They have allowed us to make our DREAMS COME TRUE! And even to go beyond what we ever had imagined for ourselves. But with that being said… we came and went dozens of times always wishing we could be a permanent part of the Mother Road Market family. We have always LOVED being there every single day we popped up. And it was always a bit sad to have to load out.

That place has such a strong sense of community and positivity. And little did we realize until recently that being a part of a COMMUNITY is something Fernando and myself have never really had in our lives. We’ve always somewhat been on an island of our own, fending for ourselves and each other.

Many of you know how much we have struggled through out the years to reach our goals. Several doors closed in our faces through out many attempts to open up restaurants. Countless gigantic obstacles. We’ve been on our entrepreneurial journey for over a decade. We have had to work harrrrrrrrd for everything we have achieved. And now we find ourselves here….

So without further ado, allow me to announce….
WE ARE NOW OFFICIALLY SHOP OWNERS AT MOTHER ROAD MARKET- voted America’s Best Food Hall three years running - and right in the CAPITAL OF ROUTE 66!!!! 🄳

Coming soon…. Koko’s- the first ever food concept we debuted at the market four years ago, now has a home to stay! It’s wildly full circle and we couldn’t possibly be more appreciative, excited and honored!

If you’ve been around here for a while you know a milestone like this calls for a story!

I gotta tell ya…. When we first started The Bayou we had NO IDEA AT ALL what was on the horizon for us. We had struggled financially for yearrrrsss working 60+ hours weeks for someone else and finally we just had enough. We got really scrappy, saved up enough for a trailer, quit our jobs and took a massive leap of faith. It’s really wild to look back on that and realize how insane we were šŸ˜‚

Our first pop up at Mother Road Market was NUTS! People were lined up all day long. We ran out of literally everything. People were ordering our scraps by the end of the day! And paying for them! And our first weekend in our food truck was the same story. We could not keep up with demand.

Through out the following years we traveled a lot. Signed up for every major food truck event we could find. We often had lines 50+ people long. That was the norm for us. It was chaos aaaaaaaallllll the time!

Two years ago we had a seven week residency at the Route 66 Christmas Chute. That was roughly 49 days straight of living on The Bayou food truck. The amount of roux whisked and Muffalettas built still leave us shuddering from the trauma. We BURNT ourselves OUT! But we had also taken on a plant based lifestyle for ourselves that we were in love with. So we switched gears and opened up Tulsa Oklahomas first 100% plant based diner. We had found our calling. But we had to say goodbye to the Bayou. Which left a lot of people upset, confused and unfollowing.

Fastforward to February 2026, Mother Road Market asked us if we wanted to return for a pop up or two. And we just can’t say no to a fun opportunity. So through years of plant based food development, we were able to convert our entire Bayou menu plant based, and do it justice. Honestly one of our biggest culinary accomplishments.

We were so nervous it wouldn’t be received well. That too many people wouldn’t be interested in trying it. There are so many negative voices on the internet and they are very loud. We let it get in our heads but we went full speed ahead anyway.

Plant based Cajun food… crazy right? But if there’s one thing we love, it’s a solid challenge. And not only did it go exceptionally well… we set the new sales record in that residency kitchen and even held our own in the top sales records of the other merchants in the market.

We had no intention of returning to food truck life. Or Bayou food. But to see the rave reviews, smiling faces & happy bellies… we just couldn’t push that to the side. The ā€œwelcome backā€ we have received in Broken Arrow just fills up our cups tenfold. It’s truly amazing! We are beyond blessed by our community.

As for the future? We have no idea! We have been looking at restaurant spaces. We have made some offers. But still everyone tells us ā€œnoā€ ultimately. So we will just keep following the path and seeing where it leads us. And when we can squeeze it into our busy schedules we plan to return with the food truck here and there.

At the end of the day we are just a husband and wife, really just trying to build a life for our five kids, and set a good example. We never imagined we’d win awards. We had no idea we’d have long lines. We never imagined we would set sales records. Or compete in competitions. We never knew we would go all plant based. Or keep succeeding with plant based foods. This has been a REALLY WILD and EXTREMELY UNPREDICTABLE ride for us 🤣

We just want to serve delicious food, with excellent customer service, while showing our children the way, practice kindness and compassion… we have said it for years ā€œgood food for everyoneā€.

Thank you all for being here. Thank you for supporting us through the ups, the downs, the wild twists and turns. We are four years in now… and we have a feeling that still… the best is yet to come šŸ™šŸ¼

SUPER EXCITING NEWS!!!

Our families restaurant… our first ever brick and mortar restaurant… Ruby D's Burger Joint has been nominated for Best Vegan Fast Food in the 4th annual VegNews Restaurant Awards!!!!!

This is no local restaurant awards…. This is national baybay! We could’ve never even dreamed we would be here getting this kind of recognition so soon! šŸ˜ Especially in little ol’ Tulsa Oklahoma where everyone told us we’d never make it selling veggie burgers 🄰🄳

To say we are over the moon is a total understatement. Even as I sit here and type this simple message tears fill my eyes. We started working for ourselves for these kids. And look at all we have built for them already. They inspire us and push us to reach new heights with every new chapter šŸ„¹šŸ–¤
