GUMBO COULD BE ON THE MENU THIS WEEK😋🔥
Chicken, Shrimp, and Sausage Gumbo
Prep time: 15 minutes
Cook time: 55 minutes
Total time: 1 hour 10 minutes
Servings: 4 to 6
🔥🔥🔥Ingredients:
1/2 lb shrimp, peeled and deveined
1/2 lb smoked sausage, sliced
1/2 lb chicken breast, cooked and shredded
1/2 cup flour
1/2 cup vegetable oil
1 onion, diced
1 green bell pepper, diced
2 celery stalks, diced
4 cups chicken broth
1 can (14 oz) diced tomatoes
2 cloves garlic, minced
1 tsp Cajun seasoning
1 tsp paprika
1 bay leaf
Salt and black pepper to taste
2 cups cooked white rice (for serving)
Chopped parsley (for garnish)
🔥🔥🔥Instructions:
Make the Roux: In a large, heavy-bottomed pot, whisk the flour and vegetable oil together over medium heat. Continue stirring constantly until the mixture toasts and reaches a rich, dark brown color.
Sauté the Veggies: Toss the diced onion, green bell pepper, and celery directly into the dark roux. Cook until the vegetables are completely softened.
Brown the Sausage: Stir in the minced garlic and sliced smoked sausage, letting them cook together for 3 to 4 minutes to release those savory flavors.
Build the Broth: Add the shredded chicken, diced tomatoes, chicken broth, Cajun seasoning, paprika, bay leaf, salt, and black pepper to the pot. Stir well to combine.
Simmer: Let the gumbo simmer uncovered for 30 to 40 minutes. Stir occasionally while the deep, complex flavors meld together.
Cook the Seafood: Drop the raw shrimp into the bubbling pot during the final 5 minutes of cooking. Let them simmer just until they turn perfectly pink and tender.
Serve: Carefully fish out and discard the bay leaf. Ladle the hot, hearty gumbo generously over warm white rice, garnish with fresh chopped parsley, and serve immediately.
