After a lot of thought, we’ve decided to sell the Country Q BBQ food trailer.

To be clear, we’re not closing and we’re not going anywhere. We’re simply making room for what’s next. Growth sometimes means letting go of what got you here so you can step into something bigger and better.

This also opens the door to bless another business owner with a fully built, well-maintained trailer at an incredible value. This trailer helped build Country Q and is ready to help someone else launch or level up their vision.

I can’t wait to share all the good things we’ve been working on. There’s a lot happening behind the scenes, and I’m doing my best to hold it until it’s time. Just know… it’s worth the wait.

What we ordered:
Brisket (sliced & chopped) · Turkey · Jalapeño & Cheddar Sausage · Spare Ribs
Cream Corn · Mac & Cheese · Cornbread
Dessert: Banana Pudding & Pecan Pie

Food Breakdown:
• Brisket – 7/10 → Smoke flavor was solid, but it lacked depth overall.
• Turkey – 10/10 → Perfect moisture and flavor start to finish.
• Sausage – 10/10 → My personal favorite. Great pork/beef balance, clean snap, just enough spice.
• Ribs – 9/10 → Strong smoke profile, great glaze, well executed.
• Cream Corn – 7/8 → Good, but nothing outside the ordinary.
• Mac & Cheese – 7/8 → Solid, but not standout.
• Cornbread – 10/10 → Not your average cornbread… hard to explain, but memorable.
• Dessert – 7/10 → Both banana pudding & pecan pie were a sweet finish to the meal.

Overall Experience:
Now I fully understand why Texas claims the BBQ capital title. The volume they push daily is insane — and the operation runs like a well-oiled machine.
Traditional Texas flavor ⁠— bold, pepper-forward, confident — and I enjoyed that a lot.

Top highlight?
Chopping it up with another BBQ guy — real conversation about the craft, the industry, and the game. That kind of connection always hits different.

I get asked often — what’s my favorite part about BBQ?

Some might think it’s the art of turning a raw product into something people are curious and eager to enjoy.
Others might think it’s the recognition, the followers, or the influence that comes with it.
Some might even think it’s the grind — the story of building something from nothing.

All that has some truth to it — but for me, it’s the fire.
The quiet hours when most are asleep, and it’s just me, the pit, the heat, and the process.
Everytime I light that grill, I’m reminded — the brisket might be done, the ribs might be tender, but something still cooking.

I’m building stamina, discipline, and growth through every late night and early morning.
That fire shapes more than food — it builds character, patience, pain tolerance and overall purpose.

So when you enjoy what CQ creates, know this — you’re enjoying more than what’s coming off the smoker.
You’re enjoying the work of someone still learning, still growing, still influencing — and still cooking. 🔥

The annual Smokin' The Fort bbq competition was one to remember!

Out of 15 teams, Mr. CQ brought home some hardware 1st place in pork, 2nd place in ribs and the ultimate title of—Grand Champion. 🏆🔥

It was an incredible competition with the chance to cook alongside some amazing pitmasters and even better people. Grateful for the experience, the camaraderie, and, of course, the art of bbq!!!

If you’ve been standing and supporting us through this journey, you know we don’t sit still for long — and with that we know God is working things out for our good!

We’ve been blessed to be part of your celebrations, your family gatherings, and your “just because” moments. Every customer and catering order has helped us grow so much
— and now it’s time to put that love into something even bigger.

Every few years, God brings a shift for us — and we’ve always been obedient to that shift. This is no different. We trust you’re going to love what’s coming for us.

As we focus on the next steps and making sure everything for CQ is exactly how we want it — up to our standards and in line with our goals — we’re hitting pause on new catering requests, events, and pop ups, for now. (I know, I know, it’s super difficult for us too)

It was such a blessing to have my daughter working alongside me on the food truck this 4th of July! Big thank you to Jim Norton Toyota for having us out to serve your amazing employees and customers—we had a blast!

2025 Block Party Recap 🙌🏾
What. A. Weekend. The Block Party was a major success — and as you can see, they kept us busy the entire time! We’re incredibly grateful to the Block Party staff for organizing such a smooth, well-run event. The turnout was amazing and the support for Country Q was even greater.

From the long lines to the kind words, y’all showed up and reminded us why we do this. A huge shoutout to the entire CQ team — your hustle, heart, and hard work made it all possible.

Hey Food Truck Family!

We’re deep in the heart of food truck season — events, catering, pop-ups, and all the excitement that comes with this grind. But in the middle of the hustle, let’s not forget something simple but critical: stay hydrated.

These days get long, and the nights? Even longer. Between the heat from the grill and the sun overhead, our bodies are working overtime. So do yourself a favor — drink your water, add those electrolytes, and take care of the most important part of this operation: YOU.

We love serving our communities, but we can’t pour from an empty cup. So while you’re out here braving the heat, remember to pour back into yourself, too.
